Quality assessment of frozen fruit pulps marketed in the Carajás-PA Region

Resumo: The fruit pulp market is a promising and profitable business within the food industry, factors such as convenience and fruit varieties in Brazil made this type of product highly appreciated by consumers. The present study aimed to evaluate the physical-chemical and microbiological characteristics of fruit pulps marketed in the Carajás-PA region, and to compare with the current legislation. To this end, five flavors (pineapple, acerola, cajá, cupuaçu and guava) from four fruit pulp brands (A, B, C and D) were analyzed for pH, total soluble solids (ºBrix), total titratable acidity and total solids. The microbiological analyzes carried out on the pulps of different brands were Coliforms at 45 °C and Salmonella sp. The results obtained for the same flavor, from different brands, were subjected to analysis of variance and comparison of means by the Tukey test at 5% significance. The results verified in the fruit pulps of the different brands, indicated the absence of microorganisms. The B brand of the different pulps was the one that best met the required standards; and the main parameters in disagreement with the legislation are the content of total soluble solids (ºBrix) and total solids, which suggests the adequacy of the industries in relation to the processing and quality control of the pulps sold in the Region of Carajás-PA.

El presente estudio tuvo como objetivo evaluar las características físico-químicas y microbiológicas de las pulpas de frutas comercializadas en la Región de Carajás-PA, y compararlas con el estándar establecido por la legislación vigente. Para ello, se analizaron cinco sabores (piña, acerola, cajá, cupuaçu y guayaba) de cuatro marcas de pulpa de fruta (A, B, C y D) para pH, sólidos solubles totales (ºBrix), acidez total titulable y sólidos totales. Los análisis microbiológicos realizados en las pulpas de diferentes marcas fueron Coliformes a 45 °C y Salmonella sp. Los resultados obtenidos para un mismo sabor, de diferentes marcas, fueron sometidos a análisis de varianza y comparación de medias mediante la prueba de Tukey al 5% de significancia. Los resultados verificados en las pulpas de frutas de las diferentes marcas, indicaron la ausencia de microorganismos. La marca B de las distintas pulpas fue la que mejor cumplió con los estándares exigidos; y los principales parámetros en desacuerdo con la legislación son el contenido de sólidos solubles totales (ºBrix) y sólidos totales, lo que sugiere la adecuación de las industrias con relación al procesamiento y control de calidad de las pulpas vendidas en la Región de Carajás-PA.O mercado de polpa de frutas é um negócio promissor e lucrativo dentro do setor alimentício, fatores como praticidade e variedades de frutas no Brasil fez esse tipo de produto ser bastante apreciado pelo consumidor. O presente estudo teve como objetivo avaliar as características físico-químicas e microbiológicas de polpas de frutas comercializadas na Região de Carajás-PA, e comparar com o padrão estabelecido pela legislação vigente. Para tanto, foram analisados cinco sabores (abacaxi, acerola, cajá, cupuaçu e goiaba) de quatro marcas de polpas de frutas (A, B, C e D) quanto ao valor de pH, sólidos solúveis (ºBrix), acideztulável e sólidos totais. As análises microbiológicas realizadas nas polpas de diferentes marcas foram coliformes a 45°C e Salmonella sp. Os resultados obtidos para um mesmo sabor, das diferentes marcas, foram submetidos à análise de variância e comparação de médias pelo teste de Tukey a 5% de significância. Os resultados verificados nas polpas de frutas das diferentes marcas indicaram ausência de microrganismos.
