Macauba (acrocomia aculeata): determination of the centesimal composition and its nutritional potential for health

Resumo: The macauba (acrocomia aculeata) is a PANC species native to Brazil, its fruits have an edible mesocarp with a yellowish or whitish color and a fibrous and mucilaginous consistency. This study aimed to analyze the nutritional constituents of the mesocarp of acrocomia aculeata. This is an experimental study with a quantitative approach, where the macauba pulp was used for the analysis of the centesimal composition (humidity, ashes, proteins, lipids, fibers and carbohydrates), performed in triplicates in the laboratory of food quality control in Teresina-PI. With the results obtained, it is observed that the sample analyzed has a high content of moisture (57.6%), fiber (13.5%) and total carbohydrates (21.22%), indicating that the use of macauba pulp can be an excellent food option, a source of energy and total fiber, contributing to the promotion of health. In conclusion, the pulp of acrocomia aculeata can be considered as a source of high total dietary fiber, and can be used as a dietary supplementation helping to achieve the daily recommendation of fiber in the diet and as an alternative or complementary treatment of various diseases, indicating its potential for the development of products with functional claims.

Este estudio tenía como objetivo analizar los constituyentes nutricionales del mesocarpio de acrocomia aculeata. Se trata de un estudio experimental con enfoque cuantitativo, en el que se utilizó la pulpa de macauba para el análisis de la composición centesimal (humedad, cenizas, proteínas, lípidos, fibras y carbohidratos), realizado por triplicado en el laboratorio de control de calidad de alimentos de Teresina-PI. Con los resultados obtenidos, se observó que la muestra analizada tiene un alto contenido de humedad (57,6%), fibra (13,5%) y carbohidratos totales (21,22%), lo que indica que el uso de la pulpa de macauba puede ser una excelente opción alimenticia, fuente de energía y fibras totales, contribuyendo a la promoción de la salud. En conclusión, la pulpa de acrocomia aculeata puede ser considerada como una fuente de alto contenido de fibras dietéticas totales, y puede ser utilizada como suplemento dietético ayudando a alcanzar la recomendación diaria de fibras en la dieta y como tratamiento alternativo o complementario de varias enfermedades, indicando su potencial para el desarrollo de productos con declaración funcional.A macaúba (acrocomia aculeata) é uma espécie de PANC, nativa do Brasil, seus frutos possuem um mesocarpo comestível de coloração amarelada ou esbranquiçada e com uma consistência fibrosa e mucilaginosa. Este estudo teve como objetivo analisar os constituintes nutricionais do mesocarpo da acrocomia aculeata. Trata-se de um estudo experimental com abordagem quantitativa, onde foi utilizada a polpa da macaúba para a análise da composição centesimal (umidade, cinzas, proteínas, lipídios, fibras e carboidratos), realizadas em triplicatas no laboratório de controle de qualidade de alimentos em Teresina-PI. Com os resultados obtidos, observa-se que a amostra analisada apresenta um alto teor de umidade (57,6%), de fibras (13,5%) e de carboidratos totais (21,22%), apontando que o uso da polpa da macaúba pode ser uma excelente opção alimentar, fonte de energia e de fibras totais, contribuindo para a promoção da saúde.
