Use of agro-industrial waste - the potential of arrowroot fibers (Maranta arundinacea L.) for human food

Resumo: New sources of dietary fiber have been prospected for their importance in promoting human health, however technical points of physicochemical quality and functional properties must be established as criteria for indication for use. Agro-industrial fibrous residues can potentially present characteristics of interest as a source of dietary fiber. In this sense, the fibers obtained after the extraction of starch from arrowroot (Maranta arundinacea L.) can potentially present properties of interest, in addition to advantages such as good sanitary conditions and low cost. Thus, the objective of this research was to carry out the determination of these properties in arrowroot fibers (common variety) obtained under laboratory conditions, being compared with commercial wheat fiber and cassava. The results presented indicate the potential use of fibers in human food, with characteristics similar to commercial fibers. Among the main highlights are: light color (61.53% clarity), with shades of red and yellow. The content of phenolics similar to wheat fiber, showing antioxidant action. The caloric value was 228 kcal 100 g-1, with a low content of lipids (2.23 g 100 g-1), protein (4.9 g 100 g-1) and ash (3.49 g 100 g-1). Neutral detergent fiber 38 g 100 g-1 and acid detergent fiber 23 g 100 g-1 profile classifies it as a fiber source and functional food for healthy adults.

Los residuos fibrosos agroindustriales pueden presentar características de interés como fuente de fibra dietética. En este sentido, las fibras obtenidas tras la extracción de almidón de maranta (Maranta arundinacea L.) pueden presentar potencialmente propiedades de interés, además de ventajas como buenas condiciones sanitarias y bajo costo. Así, el objetivo de esta investigación fue realizar la determinación de estas propiedades en fibras de maranta variedad común obtenidas en condiciones de laboratorio, comparándolas con fibra comercial de trigo y yuca. Los resultados presentados indican el uso potencial de fibras en la alimentación humana, con características similares a las fibras comerciales. Entre los principales destaques se encuentran: color claro (61,53% de claridad), con matices de rojo y amarillo. El contenido de fenólicos similar a la fibra de trigo, muestra acción antioxidante. El valor calórico fue de 228 kcal 100 g-1, con un bajo contenido en lípidos (2,23 g 100 g-1), proteínas (4,9 g 100 g-1) y cenizas (3,49 g 100 g-1). Fibra detergente neutra 38 g 100 g-1 y fibra detergente ácido 23 g 100 g-1 perfil lo clasifica como fuente de fibra y alimento funcional para adultos sanos.Novas fontes de fibras alimentares têm sido prospectadas por sua importância na promoção da saúde humana, no entanto pontos técnicos de qualidade físico-química e propriedades funcionais devem ser estabelecidos como critérios de indicação de uso. Resíduos fibrosos agroindustriais podem apresentar características de interesse como fonte de fibras alimentares. Neste sentido, as fibras obtidas após a extração de amido de araruta (Maranta arundinacea L.) podem apresentar propriedades de interesse, além de vantagens como boas condições sanitárias e baixo custo. Desta forma, o objetivo desta pesquisa foi realizar a determinação destas propriedades em fibras de araruta (variedade comum). Elas foram obtidas em condições laboratoriais e comparadas, sendo comparadas com fibra de trigo comercial e farelo de mandioca. Os resultados apresentados indicam a potencialidade de uso das fibras na alimentação humana, com características similares as fibras comerciais. Os principais resultados foram: coloração clara (61,53% de claridade), com tons de vermelho e amarelo. O teor de fenólicos similares a fibra de trigo, apresentando ação antioxidante. O valor calórico foi de 228 kcal 100 g-1, com baixo teor de lipídeos (2,23 g 100 g-1), proteínas (4,9 g 100 g-1) e cinza (3,49 g 100 g-1).
