Eating patterns of university lecturers: relationship with socioeconomic factors

Resumo: This study aimed to identify the main eating patterns of professors at a University and to associate them with socioeconomic factors. The population consisted of 734 lecturers, with a sample selected that totaled 147 individuals of both sexes, aged 22 to 50 years old. The data collection was conducted through semi-structured interviews and the survey of food consumption made by 24-hour recall. Eating patterns were identified by factor analysis by main components, followed by orthogonal varimax rotation. The adequacy of the data to the factor analysis was confirmed by the Kaiser-Meyer-Olkin coefficient (KMO) and the Barltlet sphericity test to estimate the variables in relation to eating patterns. Three eating patterns were identified: urban, popular and traditional regional. The urban pattern had greater adherence to the occupation time factor and less adherence to the race factor. The popular pattern had a greater association of occupation time and less association with race. The traditional regional pattern shows more evidence of the race factor and less evidence of the marital status factor. The knowledge of the variables associated with the eating patterns of this study can contribute to the planning of the actions of healthy practices in the studied public.

La población estuvo conformada por 734 profesores, y se seleccionó una muestra que totalizó 147 individuos de ambos sexos, con edades entre 22 y 50 años. La recolección de datos se realizó a través de entrevistas semiestructuradas y se realizó una encuesta de consumo de alimentos mediante un recordatorio de 24 horas. Los patrones dietéticos se identificaron mediante un análisis factorial de componentes principales, seguido de una rotación varimax ortogonal. La idoneidad de los datos para el análisis factorial se confirmó utilizando el coeficiente de Kaiser-Meyer-Olkin (KMO) y la prueba de esfericidad de Barltlet para estimar variables en relación con los patrones dietéticos. Se identificaron tres patrones alimentarios: urbano, popular y tradicional regional. El patrón urbano tuvo mayor adherencia del factor tiempo de ocupación y menor adherencia del factor raza. El patrón popular tuvo mayor asociación con el tiempo de ocupación y menor asociación con la raza. El patrón regional tradicional mostró mayor evidencia del factor raza y menor evidencia del factor estado civil. El conocimiento de las variables asociadas a los patrones dietéticos de este estudio puede contribuir a la planificación de acciones para prácticas saludables en el público estudiado.Este estudo teve o objetivo de identificar os principais padrões alimentares de professores de uma Universidade e associá-los a fatores socioeconômicos. A população foi composta por 734 docentes, sendo selecionada uma amostra que totalizou 147 indivíduos de ambos os sexos, com idade de 22 a 50 anos acima. A coleta de dados foi realizada através de entrevistas semiestruturadas e o levantamento do consumo alimentar feito por recordatório de 24h. Os padrões alimentares foram identificados por análise fatorial por componentes principais, seguida de rotação ortogonal varimax. A adequação dos dados à análise fatorial foi confirmada por meio do coeficiente de Kaiser-Meyer-Olkin (KMO) e do teste de esfericidade de Barltlet para estimar as variáveis em relação aos padrões alimentares. Três padrões alimentares foram identificados: urbano, popular e tradicional regional. O padrão urbano teve maior adesão do fator tempo de ocupação e menor adesão do fator raça. O padrão popular teve maior associação do tempo de ocupação e menor associação à raça. O padrão tradicional regional maior evidência do fator raça e menor evidência do fator estado civil.
