Occurrences and reasons for deviations of swine carcasses to the final inspection department from 2019 to 2021 in the state of Rondônia

Resumo: | The production of pork and its by-products is currently in growing demand, bringing high profitability to the national agribusiness sector. Brazil is the fourth largest producer and exporter of pork in the world. And for the maintenance and guarantee of this market, a good performance of the official inspection service, present in the slaughterhouses, carried out by official veterinarians who carry out control and inspection activities for the supply of safe and quality products for human consumption, is essential. In the state of Rondônia, inspection of products of animal origin in state slaughterhouses is carried out by the IDARON Agency. The scope of this work is to present an exploratory analysis regarding the occurrences and reasons for deviations of swine carcasses slaughtered in the state of Rondônia, in an establishment under the State Inspection System (SIE), from January 2019 to June 2021. It can be seen that the total average of convictions is lower (1.13%), a percentage different from those found in other states of the federation. Among the main suspected causes of alterations found in condemned carcasses, are those that presented: sexual odor (20%), contusion/fracture (19.24%), cryptorchidism (14.2%), emergency (14.2%), abscesses (13.5%), contamination (7.3%), dermatitis/skin lesions (5.8%), adherence to the peritoneum (3.1%), cachexia (1.2%), melanosis (0. 78%), purulent lymphadenitis (0.39%) and pneumonia (0.39%). Thus, it is noted that for the maintenance of public health, the activities carried out by the official inspection service are essential in order to guarantee the safety of food. |

Brasil es el cuarto mayor productor y exportador de carne de cerdo del mundo. Y para el mantenimiento y garantía de este mercado, es imprescindible una buena actuación del servicio de inspección oficial, presente en los mataderos, realizado por veterinarios oficiales que realizan actividades de control e inspección para el suministro de productos seguros y de calidad para el consumo humano. . En el estado de Rondônia, la inspección de productos de origen animal en los mataderos estatales es realizada por la Agencia IDARON. El objetivo de este trabajo es presentar un análisis exploratorio sobre las ocurrencias y las causas de las desviaciones de las canales de cerdo sacrificadas en el estado de Rondônia, en un establecimiento bajo el Sistema de Inspección Estatal (SIE), de enero de 2019 a junio de 2021. Puede ser se observa que el promedio total de condenas es menor (1.13%), porcentaje diferente a los encontrados en otros estados de la federación. Entre las principales causas sospechosas de alteraciones encontradas en canales condenadas, se encuentran las que presentaron: olor sexual (20%), contusión/fractura (19,24%), criptorquidia (14,2%), emergencia (14,2%), abscesos (13,5%), contaminación (7,3 %), dermatitis/lesiones cutáneas (5,8 %), adherencia al peritoneo (3,1 %), caquexia (1,2 %), melanosis (0,78 %), linfadenitis purulenta (0,39 %) y neumonía (0,39 %) . Así, se señala que para el mantenimiento de la salud pública, las actividades realizadas por el servicio de inspección oficial son fundamentales para garantizar la inocuidad de los alimentos.A produção de carne suína e seus subprodutos, atualmente estão numa crescente demanda, trazendo alta rentabilidade ao setor do agronegócio nacional. O Brasil é o quarto maior produtor e exportador de carne suína do mundo. E para manutenção e garantia desse mercado é essencial um bom desempenho do serviço de inspeção oficial, presente nos frigoríficos, realizado por médicos veterinários oficiais que desempenham atividades de controle e fiscalização para o fornecimento de produtos seguros e de qualidade para o consumo humano. No estado de Rondônia, a execução das atividades de inspeção de produtos de origem animal em abatedouros estaduais é realizada pela Agência IDARON. O presente trabalho tem como escopo, apresentar uma análise exploratória referente às ocorrências e motivos dos desvios de carcaças suínas abatidas no estado de Rondônia, em estabelecimento sob Sistema de Inspeção Estadual (SIE), no período de janeiro de 2019 a junho de 2021. Foi possível constatar que a média total de condenações é inferior (1,13%), uma porcentagem diferente das encontradas em outros estados da federação. Dentre as principais causas suspeitas de alterações encontradas nas carcaças condenadas, figuram as que apresentaram: odor sexual (20%), contusão/fratura (19,24%), criptorquidismo (14,2%), emergência (14,2%), abcessos (13,5%), contaminação (7,3%), dermatite/lesões de pele (5,8%), aderência ao peritônio (3,1%), caquexia (1,2%), melanose (0,78%), linfadenite purulenta (0,39%) e pneumonia (0,39%).
