Resumo: The objective of the study was to describe the productive process of rapadura and to evaluate risks to health of rural worker in the sugar cane mill. It’s a descriptive research, of case study type, developed in municipality of Tianguá, Ceará, Brazil, from August to September 2018, with workers from a sugar cane mill. Data collection was based on observation and semi-structured interview with four subjects through a semi-structured interview, based on the International Labor Organization's framework. In all stages of production there was some risk involved, the main ones referring to biological, chemical and ergonomic risk. The findings indicate that workers are daily exposed to risks and they are unaware of importance of using PPE, as well as, the company does not promote worker safety. Thus, further studies about risks and harms to health of sugar mill workers are necessary to implement safety measures at their work, avoiding possible damages that could compromise their health and quality of life.

Esta es una investigación descriptiva, del tipo estudio de caso, desarrollada en municipio de Tianguá, Ceará, Brasil, de agosto a septiembre de 2018, con trabajadores de un ingenio de caña de azúcar. La recopilación de datos se basó en la observación y entrevista semiestructurada con cuatro sujetos a través de una entrevista semiestructurada, basada en el marco de la Organización Internacional del Trabajo. En todas las etapas de producción hubo algunos riesgos involucrados, los principales se refieren al riesgo biológico, químico y ergonómico. Los resultados indican que los trabajadores están expuestos diariamente a riesgos y desconocen la importancia del uso de EPP, y que la empresa no promueve la seguridad de los trabajadores. Por lo tanto, se necesitan más estudios sobre los riesgos y daños a la salud de los trabajadores del ingenio azucarero para tratar de implementar medidas de seguridad en su trabajo, evitando posibles daños que puedan comprometer su salud y calidad de vida.O objetivo do estudo foi descrever o processo produtivo da rapadura e avaliar os riscos à saúde do trabalhador rural no engenho de cana-de-açúcar. Trata-se de uma pesquisa descritiva, do tipo estudo de caso, desenvolvido no município de Tianguá, Ceará, Brasil, durante os meses de agosto a setembro de 2018, com trabalhadores de um engenho de cana-de-açúcar. A coleta de dados foi a partir da observação e entrevista semiestruturada com quatro sujeitos por meio de uma entrevista semiestruturada, com base no referencial da Organização Internacional do Trabalho. Em todas as fases de produção houve algum risco envolvido, sendo os principais referentes aos riscos biológico, químico e ergonômico. Os achados sinalizam que os trabalhadores são expostos diariamente a riscos e os mesmos desconhecem a importância do uso de EPI, bem como, a empresa não promove a segurança dos trabalhadores.
