Behavior of elderly diabetics and their families in relation to the consumption of cookies enriched with passion fruit peel from the caatinga (P. cincinnata)

Resumo: Objective: To evaluate the adherence and behavior of the elderly and their families in relation to the consumption of cookies developed using passion fruit flour from the caatinga (P. cincinnata), for a period of 12 weeks. Method: This is a quantitative, descriptive and analytical study with a cross-sectional design. The study was carried out from November 2018 to February 2019, with 15 elderly people selected in three different groups, who would consume 30g of cookies daily for a period of 12 weeks, being monitored weekly. At the end of the consumption period, the acceptance of the cookies was evaluated, using the FACT attitude scale, as well as the purchase intention. In order to assess the food choices of the research participants, the Food Choice Questionnaire was used. Participants were asked about the interest of a family member in consuming the cookie. Results: The product was well accepted and most participants stated that they would buy it if it were available on the market. As for food choices, only the factor “ethical aspects” was not important for the participants. When asked about the interest of family members in consuming the cookies, 73.3% of the volunteers reported the interest of at least one family member. Conclusion: despite the long period of consumption, the research participants did not reveal rejection of the product, in addition to exposing family interest in its consumption.

Método: Se trata de un estudio cuantitativo, descriptivo y analítico con un diseño transversal. El estudio se llevó a cabo de noviembre de 2018 a febrero de 2019, con 15 adultos mayores seleccionados en tres grupos diferentes, que consumirían 30 g de galletas diariamente durante un período de 12 semanas, siendo monitoreados semanalmente. Al finalizar el período de consumo se evaluó la aceptación de las cookies mediante la escala de actitud FACT, así como la intención de compra. Para evaluar las elecciones de alimentos de los participantes de la investigación, se utilizó el Cuestionario de Elección de Alimentos. Se preguntó a los participantes sobre el interés de algún familiar en consumir la galleta. Resultados: El producto tuvo buena aceptación y la mayoría de los participantes afirmó que lo compraría si estuviera disponible en el mercado. En cuanto a la elección de alimentos, sólo el factor “aspectos éticos” no fue importante para los participantes. Al ser consultados sobre el interés de los familiares en consumir las galletas, el 73,3% de los voluntarios reportaron el interés de al menos un familiar. Conclusión: a pesar del largo período de consumo, los participantes de la investigación no revelaron rechazo al producto, además de exponer interés familiar en su consumo.Objetivo: Avaliar a adesão e comportamento de idosos e seus familiares em relação ao consumo dos biscoitos desenvolvidos utilizando farinha de maracujá da caatinga (P. cincinnata), por um período de 12 semanas. Método: Trata-se de um estudo quantitativo e de caráter descritivo e analítico, de delineamento transversal. O estudo foi realizado no período de novembro de 2018 a fevereiro de 2019, com 15 idosos selecionados em três grupos diferentes, que consumiriam diariamente 30g dos biscoitos por um período de 12 semanas, sendo acompanhados semanalmente. Ao final do período de consumo, a aceitação dos biscoitos foi avaliada, empregando a escala de atitudes FACT, bem como a intenção de compra. A fim de avaliar as escolhas alimentares dos participantes da pesquisa, foi utilizado o Food Choice Questionnaire. Os participantes foram questionados sobre o interesse de algum familiar em consumir o biscoito. Resultados: O produto foi bem aceito e a maioria dos participantes afirmou que o compraria, caso estivesse disponível no mercado. Quanto às escolhas alimentares, apenas o fator “aspectos éticos” não apresentou importância para os participantes. Ao serem questionados sobre o interesse dos familiares em consumir os biscoitos, 73,3% dos voluntários relataram o interesse de pelo menos um familiar.
