People management and food safety: a study of units that produce hospital meals in Sergipe

Resumo: Introduction: In the hospital context, food and nutrition are responsible for restoring patients' health, providing the essential and adequate supply of nutrients. Objective: To analyze the profile of human resources in their health services and to be involved in the context of food safety in hospital production units in the city of Aracaju, Sergipe. Method: A semistructured questionnaire was applied, seeking information on the characterization of the functional organization and human resources of the evaluated units. The professor was approved by the Research Ethics Committee of the Federal University of Sergipe. There were 211 employees, a majority female, with a high school. Results: All units of functional units have the necessary capacities and training with employees. However, as companies demonstrated difficulties in hiring employees in varied positions, these were related to lack of experience, technical knowledge and professional qualification. Conclusion: It was observed that most of the employees did not have courses in the area in which they work. For the minimun that deficiency, see must the capacity of training and capaciting, a strategy and low cost of, low provision, the continuous actions of the way continuous.

Objetivo: Analizar el perfil de los recursos humanos en los servicios de alimentación y sus posibles implicaciones en el contexto de la seguridad alimentaria en las unidades productoras de comidas hospitalarias de la ciudad de Aracaju, Sergipe. Método: Se aplicó un cuestionario semiestructurado, buscando información sobre la caracterización de la organización funcional y recursos humanos de las unidades evaluadas. El estudio fue aprobado por el Comité de Ética en Investigación de la Universidad Federal de Sergipe. Se analizaron datos de 211 empleados, la mayoría mujeres, con estudios secundarios completos. Resultados: Todas las unidades evaluadas contaron con un gerente técnico (nutricionista), y realizaron capacitaciones y capacitaciones a los empleados. Sin embargo, las empresas han mostrado problemas en la contratación de empleados en diversos puestos, los cuales están directamente relacionados con la falta de experiencia, conocimientos técnicos y formación profesional. Conclusión: Se observó que la mayoría de los empleados evaluados no cuentan con cursos profesionales en el área en la que laboran. Para minimizar esta deficiencia, es necesario llevar a cabo la formación y el desarrollo de capacidades, una estrategia eficiente y de bajo costo, siempre que estos se lleven a cabo de manera continua.Introdução: No âmbito hospitalar, a alimentação e a nutrição têm o objetivo de restaurar a saúde dos pacientes, disponibilizando o aporte essencial e adequado de nutrientes. Objetivo: Analisar o perfil dos recursos humanos em serviços de alimentação e suas possíveis implicações no contexto da segurança alimentar em unidades produtoras de refeições hospitalares na cidade de Aracaju, Sergipe. Método: Foi aplicado um questionário semiestruturado, buscando informações acerca da caracterização da organização funcional e dos recursos humanos das unidades avaliadas. O estudo foi aprovado pelo Comitê de Ética em Pesquisa da Universidade Federal de Sergipe. Foram analisados dados de 211 funcionários, sendo a maioria do sexo feminino, com ensino médio completo. Resultados: Todas as unidades avaliadas possuíam responsável técnico (nutricionista), e realizavam capacitações e treinamentos com os funcionários. No entanto, as empresas demonstraram problemas na contratação de funcionários em variados cargos, estes diretamente relacionados a falta de experiência, de conhecimento técnico e de capacitação profissional. Conclusão: Observou-se que a maioria dos funcionários avaliados não possuem cursos profissionalizantes na área em que atuam.
