Physicochemical characterization of the pulp of interspecific hybrids between Euterpe oleracea and Euterpe precatoria

Resumo: The objective of this study was to physicochemically characterize pulp samples of interspecific hybrids between E. oleracea x E. precatoria, as well as to analyze the pulp yield and anthocyanin profile in the samples. The pulp yield for the hybrids studied was 34.63% for hybrid 1 and 24.42% for hybrid 2. Statistically significant differences were found between the two samples for the analysis of lipids, proteins and anthocyanins with the interspecific hybrid 2 presenting the highest levels for the aforementioned analyses. Regarding the anthocyanin profile, it was observed that hybrid 1 had a higher value of cyanidine 3-glucoside compared to rutinoside, contrary to what was observed for hybrid 2, which had a higher content of cyanidin 3-rutinoside. This indicates that between hybrids 1 and 2, there was a genetic predominance of E. oleracea for hybrid 1 and E. precatoria for hybrid 2, in relation to the anthocyanin profile.

El rendimiento de pulpa para los híbridos estudiados fue de 34.63% para el híbrido 1 y de 24.42% para el híbrido 2. Se encontraron diferencias estadísticamente significativas entre las dos muestras, para el análisis de lípidos, proteínas y antocianinas, siendo el híbrido interespecífico 2 el que presenta los niveles más altos para los análisis antes mencionados. En cuanto al perfil de antocianinas, se observó que el híbrido 1 tuvo un mayor valor de cianidina 3-glucósido en comparación con el rutinósido, contrario a lo observado para el híbrido 2, que tuvo un mayor contenido de cianidina 3-rutinósido. Esto indica que entre los híbridos 1 y 2, hubo un predominio genético de E. oleracea para el híbrido 1 y E. precatoria para el híbrido 2, con respecto al perfil de antocianinas.O objetivo deste estudo foi caracterizar físico-quimicamente amostras de polpa de híbridos interespecíficos entre E. oleracea x E. precatoria, bem como analisar o rendimento em polpa e o perfil de antocianinas nas amostras. O rendimento em polpa para os híbridos estudados foi de 34,63% para o híbrido 1 e de 24,42% para o híbrido 2. Foram constatadas diferenças estatísticas significativas entre as duas amostras para as análises de lipídeos, proteínas e antocianinas, com o híbrido interespecífico 2 apresentando os maiores teores para as análises mencionadas. Com relação ao perfil de antocianinas, observou-se que o híbrido 1 apresentou valor mais elevado de cianidina 3-glicosídeo em comparação com a rutinosídeo, ao contrário do que foi observado para o híbrido 2, que apresentou teor superior de cianidina 3-rutinosídeo.
