Resumo: | Fish is a food that brings health benefits considering its high nutritional value, as its presence in the body enables the strenghtening of the immune system. Its freshness and quality become important to ensure the product’s safety for the consumer. It is a food of simple composition, requiring extra care in its capture, transportation, handling and storage. Therefore, the following research aims to analyze the quality of fresh fish and collect data related to the common hygienic conditions of the main market in the Amazon Capital. Analyses of the conformities and nonconformities of 5 fish from different market fishmongers were made, from which the data obtained in the sensory analysis of fresh fish’s quality were 53% nonconforming items and 47% conforming items. According to the results, the present study aimed to show the importance of the inspection of the markets so that the hygiene and food safety guidelines are followed, as the Good Hygiene and Safety Practices guarantee the product’s quality control, avoiding the risks of food contamination, besides helping to lessen the proliferation of diseases related to the ingestion of contaminated food. |

Su frescura y calidad son importantes para garantizar la seguridad del producto para el consumidor. Es un alimento de fácil composición y se debe redoblar el cuidado en su captura, transporte, manipulación y almacenamiento. Por lo tanto, esta investigación tiene como objetivo analizar la calidad del pescado fresco y recoger datos relacionados con las condiciones higiénicas generales del principal mercado de la capital amazónica. Se realizaron análisis de las conformidades y no conformidades de 5 pescados de diferentes pescaderías de la feria, donde los datos obtenidos en el análisis sensorial de la calidad del pescado fresco fue de 53% de artículos no conformes y 47% de artículos conformes. De acuerdo con los resultados, el presente estudio pretendía mostrar la importancia de la inspección de los mercados para que se cumplan las directrices de higiene y seguridad alimentaria, ya que las Buenas Prácticas de Higiene y Seguridad garantizan el control de calidad del producto y evitan los riesgos de contaminación de los alimentos, ayudando así a reducir la proliferación de enfermedades causadas por la ingestión de alimentos contaminados.O pescado é um alimento que traz benefícios à saúde, pois contém alto valor nutricional e sua presença no organismo possibilita o fortalecimento do sistema imunológico. O seu frescor e qualidade tornam-se importantes para garantir a segurança do produto para o consumidor. É um alimento de fácil decomposição e os cuidados em sua captura, transporte, manipulação e armazenamento devem ser redobrados. Diante disso, a presente pesquisa tem como objetivo analisar a qualidade do pescado fresco e coletar dados relacionados às condições higiênicas gerais da principal feira da Capital Amazonense. Foram feitas análises das conformidades e não conformidades de 5 peixes de diferentes peixarias da feira, onde os dados obtidos na análise sensorial da qualidade do pescado fresco foram 53% de itens não conformes e 47% de itens conformes.
