Physicochemical and microbiological analysis of cherry tomatoes (Solanum lycopersicum var. cesariforme) sold in emporiums in Manaus-AM

Resumo: The production and consumption of cherry tomatoes (Solanum lycopersicum var. cesariforme) has been increasing due to its nutritional properties and gastronomic potential. However, there are few data reporting the intrinsic characteristics and health quality of cherry tomatoes sold in states in the North region of Brazil. The objective of this work was to evaluate the physicochemical properties and microbiological quality of cherry tomatoes commercialized in emporiums in the city of Manaus-AM. An amount of 10 cherry tomatoes was acquired in emporiums in the West (ZO) and Center South (ZCS) zone of Manaus. These fruits were evaluated for their physicochemical properties (moisture, pH, total soluble solids expressed in °Brix, titratable acidity expressed in citric acid and ratio) and microbiological quality (mold and yeast counts, Escherichia coli and evaluation of the presence of Salmonella sp.) The average moisture content was 94.74% and pH ranged from 5.44 (ZO4) to 4.87 (ZCS1). The significant content of total soluble solids (7.60 °Brix) was verified in the ZCS sample. The acidity in citric acid was, on average, 0.39%. The ratio values ​​ranged from 26.67 (ZO4) to 8.28 (ZO1). In the evaluation of sanitary quality, 2x102 CFU/g to 5 x 103 CFU/g counts were verified for molds and yeasts, but no contamination by E. coli and Salmonella sp. Cherry tomatoes sold in the city of Manaus can be sources of fungi producers of toxins and, therefore, the microbiological quality of these fruits must be monitored to prevent damage to consumer health.

Sin embargo, hay pocos datos que reporten las características intrínsecas y la calidad sanitaria de los tomates cherry comercializados em los estados de la región norte de Brasil. El objetivo de este trabajo fue evaluar las propiedades físico-químicas y la calidad microbiológica de los tomates cherry comercializados en emporios de la ciudad de Manaus-Am. Se adquirió una cantidad de 10 muestras de tomates cherry en emporios de las Zonas Oeste (ZO) Y Centro Sur (ZCS) de Manaus. Estos frutos han sido evaluados por sus propriedades fisico-químicas (humedad, pH, sólidos solubles totales expresados como ºBrix, acidez titulable expresada como ácido cítrico y la relación SST/Acidez) y la calidad microbiológica (recuentos de mohos y levaduras, Escherichia coli, y evaluación de la presencia de Salmonella sp.). La humedad media fue de 94,74% y el pH ha variado de 5,44 (ZO4) a 4,87 (ZCS1). El contenido signicativo de sólidos solubles totales (7,60 °Brix) se verifico em la muestra ZCS. La acidez media como ácido citrico fue de 0,39%. Los valores de la relación SST/Acidez han variado de 26,67 (ZO4) a 8,28 (ZO1). En la evaluación de la calidad sanitaria, se verificaron los recuentos 2x102 UFC/g a 5 x 103 UFC/g para mohos y levaduras, pero no se observó la contaminación por E. coli e y Salmonella sp. Los tomates cherry que se venden en la ciudad de Manaus pueden ser fuentes de hongos productores de toxinas y, por lo tanto, se debe monitorear la calidad de estos frutos para evitar daños a la salud del consumidor.A produção e o consumo de tomate cereja (Solanum lycopersicum var. cesariforme) vêm crescendo devido as suas propriedades nutricionais e potencial gastronômico. A acidez em ácido cítrico foi, em média, de 0,39%. Os valores de ratio variaram de 26,67 (ZO4) a 8,28 (ZO1). Na avaliação da qualidade sanitária, foram verificadas contagens 2x102 UFC/g a 5 x 103 UFC/g para bolores e leveduras, mas não foi observada contaminação por E. coli e Salmonella sp.
