Mathematical modeling of drying kinetics and hygroscopic balance of Cymbopogon flexuosus leaves

Resumo: | The Cymbopogon genus is widely studied for its medicinal characteristics, which are recognized and used worldwide. However, there is a need to study the drying kinetics, hygroscopic balance and the color change of Cymbopogon flexuosus leaves by varying the drying temperature. The objective of this work was to study the drying kinetics of Indian grass leaves, to adjust a model among those existing in the literature that best represents the behavior of the sorption isotherm, as well as to analyze the effect of the drying process on the color of the leaves. The Indian grass leaves were cut to a length of 0.2 m and submitted to drying air temperatures of 35, 45, 55 and 70 ºC in a fixed layer mechanical dryer. For the study of the hygroscopic phenomenon, temperatures of 20, 30, 55 and 70 ºC were used with water activities between 10.75 and 85.11%. The model that best represented the drying curves was the Midilli model with an R² of 0.99. The model that best represented the hygroscopic balance curve of Indian grass leaves was that of Modified GAB with R² of 0.94. As the drying air temperature increased, the samples darkened at temperatures above 45 ºC. |

Sin embargo, es necesario estudiar la cinética de secado, el equilibrio higroscópico y el cambio de color de las hojas de Cymbopogon flexuosus variando la temperatura de secado. El objetivo de este trabajo fue estudiar la cinética de secado de las hojas de hierba india, ajustar un modelo entre los existentes en la literatura que mejor represente el comportamiento de la isoterma de sorción, así como analizar el efecto del proceso de secado en el color de las hojas. Las hojas de hierba india se cortaron a una longitud de 0.2 my se sometieron a temperaturas de aire de secado de 35, 45, 55 y 70 ºC en un secador mecánico de capa fija. Para el estudio del fenómeno higroscópico, se utilizaron temperaturas de 20, 30, 55 y 70 ºC con actividades acuáticas entre 10.75 y 85.11%. El modelo que mejor representó las curvas de secado fue el modelo Midilli con un R² de 0.99. El modelo que mejor representó la curva de equilibrio higroscópico de las hojas de hierba india fue el GAB modificado con R² de 0,94. A medida que aumentaba la temperatura del aire de secado, las muestras se oscurecían a temperaturas superiores a 45 ºC.O gênero Cymbopogon é amplamente estudado por suas características medicinais, as quais são reconhecidas e utilizadas em todo o mundo. No entanto há a necessidade de se estudar a cinética de secagem, equilíbrio higroscópico e a alteração de cor das folhas de Cymbopogon flexuosus mediante a variação da temperatura de secagem. O objetivo deste trabalho foi estudar a cinética de secagem de folhas de capim-indiano, ajustar um modelo dentre os existentes na literatura que melhor representa o comportamento da isoterma de sorção, como também analisar o efeito do processo de secagem na coloração das folhas. As folhas de capim-indiano foram cortadas em comprimento de 0,2 m e submetidas às temperaturas de ar de secagem de 35, 45, 55 e 70 ºC em secador mecânico de camada fixa. Para o estudo do fenômeno de higroscopicidade foram utilizadas as temperaturas de 20, 30, 55 e 70 ºC com atividades de água entre 10,75 e 85,11%. O modelo que melhor representou as curvas de secagem foi o modelo de Midilli com R² de 0,99. O modelo que melhor representou a curva de equilíbrio higroscópico das folhas de capim-indiano foi o de GAB Modificado com R² de 0,94.
