Vegetarians and micronutrient deficiency: a literature review

Resumo: This study has as its theme the relationship between vegetarians and micronutrient deficiency because it understands that the inadequate vegetarian lifestyle adecism may result in a deficiency of essential nutrients. The objective was to conduct an integrative review on vegetarians and the presence of nutritional deficiency. For the selection of the sample, indexed articles were defined from 2015 to 2020, published in national and international journals, available in Portuguese and English. Data collection was performed in the Virtual Health Library (VHL), Lilacs, Scielo, PubMed, and Google Scholar database, using the following descriptors: vegetarian diet, iron, nutritional deficiencies, vitamin deficiency, mineral deficiency, micronutrients, vitamin B12 deficiency and iron deficiency. The search resulted in 32 articles, after the use of inclusion and exclusion criteria there were 10 articles left for analysis, interpretation and discussion. It was observed that among vegetarians there is a nutritional deficiency or deficiency, and this occurs through the increased consumption of phytatis and oxalates, due to the high intake of fibers. It is concluded that vegetarians present nutritional deficit of zinc, calcium, iron, vitamin B12 and vitamin D and that the adequate intake of all nutrients, through a balanced diet, as well as, if there is a need to insert supplementation of any of these micronutrients, through the complete evaluation of the nutritionist is a promising strategy in the prevention of micronutrient deficit in vegetarians.

El objetivo era llevar a cabo una revisión integradora sobre los vegetarianos y la presencia de deficiencia nutricional. Para la selección de la muestra, se definieron artículos indexados de 2015 a 2020, publicados en revistas nacionales e internacionales, disponibles en portugués e inglés. La recopilación de datos se realizó en la base de datos de la Biblioteca Virtual de Salud (VHL), Lilacs, Scielo, PubMed y Google Scholar, utilizando los siguientes descriptores: dieta vegetariana, hierro, deficiencias nutricionales, deficiencia de vitaminas, deficiencia mineral, micronutrientes, deficiencia de vitamina B12 y deficiencia de hierro. La búsqueda dio lugar a 32 artículos, después del uso de criterios de inclusión y exclusión quedaban 10 artículos para el análisis, la interpretación y la discusión. Se observó que entre los vegetarianos hay una deficiencia o deficiencia nutricional, y esto ocurre a través del mayor consumo de phytatis y oxalatos, debido a la alta ingesta de fibras. Se concluye que los vegetarianos presentan déficit nutricional de zinc, calcio, hierro, vitamina B12 y vitamina D y que la ingesta adecuada de todos los nutrientes, a través de una dieta equilibrada, así como, si es necesario insertar la suplementación de cualquiera de estos micronutrientes, a través de la evaluación completa del nutricionista es una estrategia prometedora en la prevención del déficit de micronutrientes en los vegetarianos.Este estudo tem como temática a relação entre vegetarianos e a deficiência de micronutrientes por entender que, a adesão do estilo de vida vegetariano feita de forma inadequada pode resultar em uma deficiência de nutrientes essenciais. O objetivo foi realizar uma revisão integrativa sobre vegetarianos e a presença de deficiência nutricional. Para a seleção da amostra definiu-se artigos indexados de 2015 a 2020, publicados em periódicos nacionais e internacionais, disponibilizados em língua portuguesa e inglesa. A coleta de dados foi realizada na base Biblioteca Virtual de Saúde (BVS), Lilacs, Scielo, PubMed, e Google Acadêmico, utilizando os seguintes descritores: dieta vegetariana, ferro, deficiências nutricionais, deficiência de vitaminas, deficiência de minerais, micronutrientes, deficiência de vitamina B12 e deficiência de ferro. A busca resultou em 32 artigos, após utilização dos critérios de inclusão e exclusão restaram 10 artigos para análise, interpretação e discussão. Observou-se que entre vegetarianos há uma deficiência ou carência nutricional, e isso se dá por meio do consumo aumentado de fitatos e oxalatos, devido à alta ingestão de fibras.
