Evaluation of pH measurements of bottled mineral water samples as a proposal for the teaching of acids and bases at a higher level

Resumo: Comparative pH analyses were performed on sparkling and mineral water by three distinct methods: pH meter, pH indicator strips, and a universal pH indicator; to present an investigation as a proposal to aid teaching Acid-Base theories for undergraduate students using “Chemistry behind carbonated waters” as theme. Thus, pH values for carbonated and mineral waters were measured and compared with those described in the label, and a discussion was presented for each method employed to gauge pH. A discussion was held to bring students different, more comprehensive acid-base concepts, aiming to expand their knowledge of the subject, and introduce them to new subjects, starting from a simple pH measurement and reaching the calculations required to determine the content of CO2 dissolved in carbonated water samples. Furthermore, data were compared with the current legislation to avoid fraud. Hence, our paper covers acid-base concepts and expands this subject to other areas of chemistry by utilizing contextualization as a teaching strategy.

Presentamos una investigación como propuesta de ayuda a la enseñanza de teorías sobre ácido-base para alumnos de curso universitario/graduación con el tema “Química detrás del agua con gas”. Así, los valores de pH de aguas minerales con y sin gas se midieron y se compararon con los valores descriptos en la etiqueta, se presentó una discusión para cada método utilizado para medir el pH. Se llevó a cabo una discusión para traer a los estudiantes/ los alumnos diferentes conceptos ácido-base más amplios, con el fin de ampliar sus conocimientos sobre el tema e introducirlos en otros temas nuevos, a partir de una simple medición de pH y llegar a los cálculos necesarios para determinar el contenido de CO2 disuelto en las muestras de agua con gas. Además, los datos fueron comparados con la legislación vigente para prevenir el fraude. Entonces nuestro artículo cubre conceptos ácido- base y expande este tema a otras áreas de la química utilizando la contextualización como estrategia didáctica.As análises comparativas de pH foram realizadas em água mineral com e sem gás por três métodos distintos: pHmetro, fita indicadora de pH e um indicador universal de pH; apresentamos uma investigação como proposta de auxílio ao ensino das teorias ácido-base para alunos de graduação tendo como tema “Química por trás da água com gás”. Assim, os valores de pH das águas minerais com e sem gás foram medidos e comparados com os valores  descritos no rótulo, e uma discussão foi apresentada para cada método empregado para aferir o pH. Foi realizada uma discussão para trazer aos alunos diferentes conceitos ácido-base mais abrangentes, com o objetivo de ampliar seus conhecimentos sobre o assunto e introduzi-los a outros novos assuntos, a partir de uma simples medição de pH e chegando aos cálculos necessários para determinar o teor de CO2 dissolvido nas amostras de água com gás. Além disso, os dados foram comparados com a legislação em vigor para evitar fraudes.
