Comparative study between Monascus species for the production of natural pigments using agroindustrial waste as a substrate

Summary: | The filamentous fungus species Monascus produce natural pigments of different colors, in addition to bioactive compounds with antioxidant potential, being able to metabolize low cost substrates. However, there are several species of this genus that can exhibit different behaviors in relation to the production of pigments in the same production medium. Thus, the work proposal was to evaluate the behavior of two species of the genus Monascus, M. ruber URM 4530 and M. purpureus CCT 3802 regarding pigment production and, from the best results, evaluate the antioxidant activity of capturing ABTS+• radicals and DPPH• using cassava bran as a fermentative substrate and monosodium glutamate as a nitrogen source, with the aid of a Central Composite Design (DCC). As a result, better production and antioxidant activity were verified when using the M. purpureus strain, presenting 13.77 UA510 for the production of pigments and 96.1 % and 62.7 % inhibition of the radicals ABTS+• and DPPH•, respectively. In contrast, the M. ruber strain had a maximum production of 5.82 UA510. Thus, the results indicated different performances of the species of the genus Monascus, using the same residue as substrate and process conditions, with better pigment production performance and antioxidant activity for the strain M. purpureus CCT 3802. |

Sin embargo, existen varias especies de este género que pueden exhibir diferentes comportamientos en relación a la producción de pigmentos en un mismo medio de producción. Así, la propuesta de trabajo fue evaluar el comportamiento de dos especies del género Monascus, M. ruber URM 4530 y M. purpureus CCT 3802 respecto a la producción de pigmentos y, a partir de los mejores resultados, evaluar la actividad antioxidante de la captura de radicales ABTS+• y DPPH• utilizar salvado de yuca como sustrato fermentativo y glutamato monosódico como fuente de nitrógeno, con la ayuda de un diseño compuesto central (DCC). Como resultado, se verificó una mejor producción y actividad antioxidante en el uso de la especie M. purpureus, presentando 13,77 UA510 para la producción de pigmentos y 96,1 % y 62,7 % de inhibición de los radicales ABTS+• y DPPH•, respectivamente. Por el contrario, la cepa de M. ruber tuvo una producción máxima de 5,82 UA510. Así, los resultados indicaron diferentes comportamientos de las especies del género Monascus, utilizando el mismo residuo como sustrato y condiciones de proceso, con mejor rendimiento de producción de pigmento y actividad antioxidante para la cepa M. purpureus CCT 3802.As espécies do fungo filamentoso Monascus produzem pigmentos naturais de diferentes cores, além de compostos bioativos com potencial antioxidante, sendo capazes de metabolizar substratos de baixo custo. Entretanto, existem várias espécies deste gênero que podem apresentar comportamentos distintos em relação à produção de pigmentos em um mesmo meio de produção. Assim, a proposta de trabalho foi avaliar o comportamento de duas espécies do gênero Monascus, M. ruber URM 4530 e M. purpureus CCT 3802 quanto à produção de pigmentos e, a partir dos melhores resultados e avaliar a atividade antioxidante de captura dos radicais ABTS+• e DPPH• utilizando farelo de mandioca como substrato fermentativo e glutamato monossódico como fonte de nitrogênio, com auxílio de um Delineamento Composto Central (DCC). Como resultado, foram verificadas melhores produção e atividade antioxidante na utilização da espécie M. purpureus, apresentando 13,77 UA510 para a produção de pigmentos e 96,1 % e 62,7 % de inibição dos radicais ABTS+• e DPPH•, respectivamente. Em contrapartida, a cepa M. ruber apresentou produção máxima de 5,82 UA510.
