Resumo: | Coalho's cheese is a typical product that is part of the culture and traditions of the Northeast region of Brazil, being consumed in natura or as an ingredient in several dishes typical of the region. The objective of this research was to characterize the consumer profile of Coalho cheese in the state of Paraíba. The study was characterized by the use of a questionnaire containing 18 questions, in the interview format, of a total sample of 400 interviewees in the cities of João Pessoa, Campina Grande, Santa Rita and Patos. The predominant age group was older than 45 years, most of them attended high school and all the interviewees consumed milk or milk products. Cheese is the most consumed milk product, followed by milk and yogurt. Respondents like to consume more of the roasted, natural and fried Coalho cheese. Most do not observe the validity of the cheese, however, be careful about hygiene at the time of purchase. Therefore, it was observed that the consumers of rennet cheese from the cities evaluated are male, with secondary school and age over 45 years, mostly consumed Rennet cheese once a week, at breakfast, mainly roasted. |

El objetivo de esta investigación fue caracterizar el perfil del consumidor de queso de Coalho en el estado de Paraíba. El estudio se caracterizó por la utilización de un cuestionario que contenía 18 preguntas, en el formato de entrevista, de total muestral de 400 entrevistados en las ciudades de João Pessoa, Campina Grande, Santa Rita y Patos. El grupo de edad predominante fue mayor que 45 años, la mayoría cursó la enseñanza media y todos los entrevistados consumían leche o derivados. El queso es el producto lácteo más consumido, seguido de leche y yogurt. Los entrevistados les gusta consumir más el queso de Coelho asado, natural y frito. La mayoría no observa la validez del queso, sin embargo, tiene cuidado con la higiene a la hora de la compra. Por lo tanto, se observó que el consumidor de queso cuajo de las ciudades evaluadas es del género masculino, con enseñanza media y edad superior a 45 años, en su mayoría consume el queso de cuajo una vez a la semana, en el desayuno, principalmente asado.O queijo de Coalho é um produto típico que faz parte da cultura e das tradições da região Nordeste do Brasil, sendo bastante consumido in natura ou como ingrediente em vários pratos típicos da região. O objetivo desta pesquisa foi caracterizar o perfil do consumidor de queijo de Coalho no estado da Paraíba. O estudo caracterizou-se pela utilização de um questionário contendo 18 questões, no formato de entrevista, com total amostral de 400 entrevistados nas cidades de João Pessoa, Campina Grande, Santa Rita e Patos. A faixa etária predominante foi maior que 45 anos, a maioria cursou o ensino médio e todos os entrevistados consumiam leite ou derivados. O queijo é o produto lácteo mais consumido, seguido de leite e iogurte. Os entrevistados gostam de consumir mais o queijo de Coalho assado, natural e frito. A maioria não observa a validade do queijo, no entanto, tem cuidado com a higiene na hora da compra.
