Resumo: | This work aims to perform the drying kinetics of grape residues cv. “Isabel” at different drying air temperatures and adjust the experimental data obtained to the empirical mathematical models. The drying kinetics of grape residues (skins + seeds) were carried out in an air circulation oven with a speed of 1.5 m s-1, at temperatures of 50, 60 and 70 °C, where the samples were placed in trays stainless steel, up to constant weight. The empirical mathematical models of Handerson and Pabis, Lewis and Page were applied to the experimental data, in which the chi-square statistical indicators and determination coefficient R2 were evaluated. According to the determination coefficient (R2), the models presented values above 0.93 for all applied temperatures, while analyzing the chi-square ( ) it can be observed that the Page model presented the lowest values. The highest rates of waste water removal occurred at the highest temperatures (70 °C) and the period of decreasing drying rate was only observed after 100 minutes of drying. As a suggestion for future work, it is possible to carry out a physical, physical-chemical and technological characterization of the dehydrated material and to evaluate the influence of the process temperatures on these parameters. |

La cinética de secado de los residuos de uva (hollejos + pepitas) se realizó en un horno de circulación de aire con una velocidad de 1,5 m s-1, a temperaturas de 50, 60 y 70 °C, donde se colocaron las muestras en bandejas. acero inoxidable, hasta peso constante. A los datos experimentales se aplicaron los modelos matemáticos empíricos de Handerson y Pabis, Lewis y Page, en los que se evaluaron los indicadores estadísticos chi-cuadrado y el coeficiente de determinación R2. De acuerdo con el coeficiente de determinación (R2), los modelos presentaron valores superiores a 0.93 para todas las temperaturas aplicadas, mientras que al analizar la chi-cuadrado ( ) se puede observar que el modelo de Page presentó los valores más bajos. Las tasas más altas de eliminación de aguas residuales ocurrieron a las temperaturas más altas (70 °C) y el período de tasa de secado decreciente solo se observó después de 100 minutos de secado. Como sugerencia para trabajos futuros, es posible realizar una caracterización físico-química y tecnológica del material deshidratado y evaluar la influencia de las temperaturas del proceso sobre estos parámetros.O presente trabalho tem como objetivo realizar a cinética de secagem dos resíduos de uva cv. “Isabel” em diferentes temperaturas do ar de secagem e ajustar os dados experimentais obtidos aos modelos matemáticos empíricos. A cinética de secagem dos resíduos da uva (cascas + sementes) foi realizada em estufa de circulação de ar com velocidade de 1,5 m s-1, nas temperaturas de 50, 60 e 70 °C, onde as amostras foram dispostas em bandejas de aço inoxidável, até peso constante. Aos dados experimentais foram aplicados os modelos matemáticos empíricos de Handerson e Pabis, Lewis e Page, no qual foram avaliados os indicadores estatísticos qui-quadrado, e coeficiente de determinação R2. De acordo com o coeficiente de determinação (R2) os modelos apresentaram valores superiores a 0,93 para todas as temperaturas aplicadas, enquanto que analisando o qui-quadrado ( ) pode-se observar que o modelo de Page apresentou os menores valores. As maiores taxas de remoção de água dos resíduos ocorrerem nas maiores temperaturas (70 °C) e o período de taxa de secagem decrescente só foi observado após os 100 minutos de secagem.
