Consumption of pork meat and its derivatives in the southeastern mesoregion of Pará in the period of the Covid-19 pandemic

Resumo: | Brazilian swine farming has grown in recent years with the use of technologies and greater knowledge in the areas of nutrition, management, genetics and animal welfare. Allied to this, there is a product with high nutritional value and excellent taste. In this sense, the objective of this work was to characterize the consumption of pork and other swine products in the region Southeast region of Pará during the pandemic. The research was carried out in the southeastern mesoregion of the state of Pará during 2021, to study the process of evaluating the opinion of the region's residents regarding pork consumption during the Covid-19 pandemic period, for this, a questionnaire was structured and elaborated on the Googleforms platform. The questionnaire was widely publicized and shared through social media. It was possible to observe that the frequency of consumption of pork and the purchase in supermarkets was 46% for both, while in relation to the choice of the most purchased pork cuts was the rib with 31%, having as a criterion better flavor. Of the interviewees, 58% use swine lard in cooking. Thus, it is extremely relevant strategies of the productive market for disclosures about the benefits and quality of Brazilian pork. |

Aliado a esto, existe un producto con alto valor nutricional y tiene un excelente sabor. En este sentido, el objetivo de este trabajo fue caracterizar el consumo de carne de cerdo y otros productos porcinos de la región en la región sudeste de Pará durante la pandemia. La investigación se llevó a cabo en la mesorregión sureste del estado de Pará durante 2021, para estudiar el proceso de evaluación de la opinión de los residentes de la región con respecto al consumo de carne de cerdo durante el período de pandemia de Covid-19, para ello, se estructuró un cuestionario en la plataforma Googleforms. El cuestionario fue ampliamente publicitado y compartido a través de las redes sociales. Se pudo observar que la frecuencia de consumo de carne de cerdo y la compra en supermercados fue del 46% para ambos, mientras que en relación con la elección de los cortes de cerdo más comprados fue la costilla con un 31%, teniendo como criterio mejor sabor. De los entrevistados, el 58% utiliza manteca de cerdo en la cocina. Por lo tanto, es extremadamente relevante las estrategias del mercado productivo para las divulgaciones sobre los beneficios y la calidad de la carne de cerdo brasileña.A suinocultura brasileira tem crescido nos últimos anos com o uso de tecnologias e maior conhecimento nas áreas de nutrição, manejo, genética e bem estar animal. Aliado a isso, observa-se um produto com alto valor nutricional e excelente sabor. Nesse sentido, o objetivo deste trabalho foi caracterizar o consumo de carne e demais produtos de origem suína na região Sudeste do Pará durante a pandemia. A pesquisa foi desenvolvida na mesorregião sudeste do estado do Pará durante o ano de 2021, para isso, um questionário foi estruturado e elaborado na plataforma Googleforms. O questionário foi amplamente divulgado e compartilhado através de mídias sociais. Foi possível observar que a frequência de consumo da carne suína e a compra em supermercados foi de 46% para ambos, já com relação a escolha dos cortes de carne suína mais comprada foi a costela com 31%, tendo como critério melhor sabor. Dos entrevistados, 58% fazem uso da banha suína na culinária.
