Influence of packing on the post-harvest quality of baby leaf from upland cress

Resumo: In the present study, variations during storage were investigated in the postharvest quality of baby leaf of upland cress packed in different packages. The use of PET PCR packaging proved not to be feasible for the refrigerated storage of baby leaf of upland cress, whereas the zip lock packages of 100µm polyethylene and sealed 50µm low density polyethylene, proved to be good options. The experiment was then conducted using the zip lock packages of 100µm polyethylene and sealed 50µm low density polyethylene, under an average refrigeration temperature of 6ºC ± 1 and a relative humidity of 87% ± 1.6. The samples were evaluated at times 0, 2, 4, 6, 8, 10 and 12 days. The analyzes performed were percentage of mass loss, CO2 monitoring inside the packaging, color, pH, titratable acidity, total chlorophyll, total carotenoids, total phenolic content and antioxidant capacity. The 100µm polyethylene zip lock packaging determined less CO2 accumulation, greater preservation of green color, greater stabilization in the degradation of carotenoids and less depletion of the antioxidant capacity of the watercress baby leaf. These results suggest that the 100µm polyethylene zip lock packaging provides better storage conditions, giving the upland cress baby leaf a shelf life of up to 12 days, ensuring a quality product for the consumer.

El uso de envases PET PCR demostró no ser factible para el almacenamiento refrigerado de hoja de bebé, mientras que los envases zip lock de polietileno de 100 µm y polietileno de baja densidad sellado de 50 µm demostraron ser buenas opciones. A continuación, el experimento se llevó a cabo utilizando los paquetes zip lock de polietileno de 100 µm y polietileno de baja densidad sellado de 50 µm, bajo una temperatura de refrigeración promedio de 6ºC ± 1 y una humedad relativa de 87% ± 1,6. Las muestras se evaluaron en los tiempos 0, 2, 4, 6, 8, 10 y 12 días. Los análisis realizados fueron porcentaje de pérdida de masa, monitoreo de CO2 dentro del empaque, color, pH, acidez titulable, clorofila total, carotenoides totales, contenido fenólico total y capacidad antioxidante. El empaque zip lock de polietileno de 100µm determinó menor acumulación de CO2, mayor preservación del color verde, mayor estabilización en la degradación de carotenoides y menor agotamiento de la capacidad antioxidante de la hoja bebé de berro. Estos resultados sugieren que el empaque zip lock de polietileno de 100 µm proporciona mejores condiciones de almacenamiento, dando a la hoja bebé de berro una vida útil de hasta 12 días, asegurando un producto de calidad para el consumidor.No presente estudo foram investigadas as variações ao longo do armazenamento, na qualidade pós colheita de “baby leaf” de agrião da terra acondicionado em diferentes embalagens. O uso de embalagem tipo PET PCR mostrou não ser viável para o armazenamento refrigerado de “baby leaf” de agrião da terra, já as embalagens zip lock de polietileno 100µm e polietileno de baixa densidade 50µm selada, demonstraram ser boas opções. O experimento foi então conduzido utilizando as embalagens zip lock de polietileno 100µm e polietileno de baixa densidade 50µm selada, sob a temperatura média de refrigeração de 6ºC±1 e umidade relativa de 87%±1,6.  A avalição das amostras foi realizada nos tempos 0, 2, 4, 6, 8, 10 e 12 dias. As análises realizadas foram percentual de perda de massa, monitoramento de CO2 dentro da embalagem, coloração, pH, acidez titulável, clorofila total, carotenoides totais, teor de fenólicos totais e capacidade antioxidante. A embalagem de zip lock de polietileno 100µm determinou menor acúmulo de CO2, maior preservação da cor verde, maior estabilização na degradação de carotenoides e uma menor depleção da capacidade antioxidante do “baby leaf” de agrião.
