Prediction of mathematical models on the drying kinetics of shelled walnuts (Juglans regia L.)

Resumo: | The present work aimed to perform the drying kinetics of shelled walnuts at different drying air temperatures and to adjust different mathematical models to experimental drying data, selecting the one that best describes the phenomenon. The drying kinetics were performed in a dryer with air circulation with an air speed of 1.5 m/s, at temperatures of 40, 50 and 60 °C. The experimental data were adjusted using the empirical models of Page, Handerson and Pabis, Newton, Logarithmic and Midili. The best model was selected taking as a parameter the magnitude of the coefficient of determination (R2) and the mean square deviation (DQM). The Page and Midili models stood out from the others because they presented the best R2 values (> 99%) and the lowest DQM values (<0.0306463) for the studied drying temperatures. The drying kinetics of the nuts without shells showed that the temperature was the variable of greatest influence in the process, and that the drying constant “k” increased with its increase, and the time of the process decreased due to its increase. |

La cinética de secado se realizó en un secador con circulación de aire con una velocidad del aire de 1,5 m/s, a temperaturas de 40, 50 y 60 °C. Los datos experimentales se ajustaron utilizando los modelos empíricos de Page, Handerson y Pabis, Newton, Logarithmic y Midili. El mejor modelo se seleccionó tomando como parámetro la magnitud del coeficiente de determinación (R2) y la desviación cuadrática media (DQM). Los modelos Page y Midili se destacaron de los demás porque presentaron los mejores valores de R2 (> 99%) y los valores más bajos de DQM (<0.0306463) para las temperaturas de secado estudiadas. La cinética de secado de las nueces sin cáscara mostró que la temperatura fue la variable de mayor influencia en el proceso, y que la constante de secado "k" aumentó con su aumento, y el tiempo del proceso disminuyó debido a su aumento.O presente trabalho teve como objetivo realizar a cinética de secagem da noz sem casca, em diferentes temperaturas de ar de secagem e ajustar diferentes modelos matemáticos aos dados experimentais da secagem, selecionando aquele que melhor descreve o fenômeno. A cinética de secagem foi realizada em um secador com circulação de ar com velocidade de ar de 1,5 m/s, nas temperaturas de 40, 50 e 60 °C. Aos dados experimentais foram ajustados dos modelos empíricos de Page, Handerson e Pabis, Newton, Logarítmico e Midili. O melhor modelos foi selecionado tomando-se como parâmetro a magnitude do coeficiente de determinação (R2) e do desvio quadrático médio (DQM). Os modelos Page e Midili se destacaram dos demais por apresentaram os melhores valores de R2 (>99%) e menos valores de DQM (<0,0306463) para as temperaturas de secagem estudadas. A cinética de secagem das nozes sem cascas mostrou que a temperatura foi a variável de maior influência no processo, e que a constante de secagem “k” aumentou com a sua elevação, e o tempo do processo diminuiu em função do seu aumento.
