Eating Attitudes and Life Habits of Institutionalized Elderly People in the Northeast Capital

Resumo: The objective of this study was to know the eating attitudes and lifestyle habits of institutionalized elderly people. This is a descriptive cross-sectional research with a non-probabilistic sample, for convenience, composed of 19 elderly people residing in three LTCFs located in a capital of the Northeast. Data were obtained in the second half of 2017, using a semi-structured form composed of 25 questions. Descriptive statistics were used to present the results. Among those surveyed, there was a prevalence of women (68.5%) to the detriment of men (31.6%), the majority of whom were eighty years old or older (52.7%), in addition to hypertensive, diabetic and sedentary individuals. Regarding eating attitudes, 47% and 11%, respectively, were partially and totally dissatisfied with the food provided in the institutions; 69% had 5 to 6 meals / day; for 74% the quantity offered was sufficient; 36.8% reported aversion to some foods; everyone was in the habit of not adding salt to the ready meal and, also, they found the place comfortable for them. As for the preparations that brought more memories, there was a greater mention for salty foods; 63.2% pointed out that there were differences between the current diet and the past diet; 57.9% reported no restrictions on food intake for health reasons. Regarding the specificities of food consumption, there was an inadequacy in the fruit and vegetable groups for most elderly people; 48% ingested three to six glasses of water / day; 89.5% were not in the habit of exchanging the meal for a snack; for 58.0% and 63.2%, respectively, the consumption of industrialized soft drinks / juices; of cakes, cookies (sweets, stuffed) and other goodies occurred only at social gatherings or on special occasions. It was evidenced that this elderly population residing in these three institutions presented adjustments and inadequacies related to food consumption and the menus offered; singularities of food habits and sedentary lifestyle. Therefore, it requires adjustments to the usual menu and encouragement of social interaction activities aiming at a later change in eating habits and lifestyle.

Esta es una investigación descriptiva de corte transversal con una muestra no probabilística, por conveniencia, compuesta por 19 personas mayores que residen en tres LTCF ubicados en una capital del noreste. Los datos se obtuvieron en el segundo semestre de 2017, utilizando un formulario semi estructurado compuesto por 25 preguntas. Se utilizaron estadísticas descriptivas para presentar los resultados. Entre los encuestados, hubo una prevalencia de mujeres (68.5%) en detrimento de los hombres (31.6%), la mayoría de los cuales tenían ochenta años o más (52.7%), además de individuos hipertensos, diabéticos y sedentarios. Con respecto a las actitudes dietéticas, el 47% y el 11%, respectivamente, estaban parcial y totalmente insatisfechos con la comida provista en las instituciones; 69% tenían 5 a 6 comidas / día; para el 74% la cantidad ofrecida fue suficiente; 36.8% reportó aversión a algunos alimentos; todos tenían la costumbre de no agregar sal a la comida preparada y también encontraban el lugar cómodo. En cuanto a los preparativos que trajeron más recuerdos, hubo una mayor mención de los alimentos salados; El 63.2% señaló que había diferencias entre la dieta actual y la dieta pasada; El 57.9% no informó restricciones en la ingesta de alimentos por razones de salud. Con respecto a las especificidades del consumo de alimentos, hubo una insuficiencia en los grupos de frutas y verduras para la mayoría de las personas mayores; 48% ingirió de tres a seis vasos de agua / día; El 89.5% no tenía la costumbre de cambiar la comida por una merienda; para 58.0% y 63.2%, respectivamente, el consumo de refrescos / jugos industrializados; de pasteles, galletas (dulces, rellenos) y otras golosinas ocurrieron solo en reuniones sociales o en ocasiones especiales. Se evidenció que esta población de ancianos que residía en estas tres instituciones presentaba ajustes e insuficiencias relacionadas con el consumo de alimentos y los menús ofrecidos; singularidades de hábitos alimenticios y estilo de vida sedentario. Por lo tanto, requiere ajustes en el menú habitual y alienta las actividades de interacción social con vistas a los cambios posteriores en los hábitos alimenticios y el estilo de vida.Objetivou-se com este estudo conhecer as atitudes alimentares e hábitos de vida de idosos institucionalizados. Trata-se de uma pesquisa de abordagem descritiva de corte transversal com amostra não probabilística, por conveniência, composta por 19 idosos residentes em três ILPI situadas em uma capital do Nordeste. Os dados foram obtidos no segundo semestre de 2017, por formulário semi estruturado composto por 25 questões. Serviu-se da estatística descritiva para a exposição dos resultados. Entre os pesquisados houve prevalência de mulheres (68,5%) em detrimento de homens (31,6%), sendo a maioria com oitenta anos ou mais (52,7%), além de hipertensos, diabéticos e sedentários. Sobre as atitudes alimentares, respectivamente, 47% e 11% estavam parcialmente e totalmente insatisfeitos com a alimentação fornecida nas instituições; 69% realizavam 5 a 6 refeições/dia; para 74% a quantidade ofertada era suficiente; 36,8% relataram aversão a alguns alimentos; todos tinham hábito de não adicionar sal a refeição pronta e, também, achavam o local confortável para a realização das mesmas. Quanto às preparações que traziam mais lembranças houve maior menção para as salgadas; 63,2% apontaram que havia diferenças entre a alimentação atual e a alimentação do passado; 57,9% não relataram restrições na ingestão alimentar por questões de saúde. Em relação às especificidades do consumo alimentar, houve inadequação nos grupos de frutas e de verduras para a maior parte dos idosos; 48% faziam a ingestão de três a seis copos de água/dia; 89,5% não tinham hábito de trocar a refeição por lanche; para 58,0%  e 63,2%, respectivamente, o consumo de refrigerantes/sucos industrializados; de bolos, biscoitos (doces, recheados) e outras guloseimas ocorria apenas em confraternizações ou em ocasiões especiais. Evidenciou-se, que essa população idosa residente nessas três Instituições apresentou adequações e inadequações relacionadas ao consumo alimentar e aos cardápios ofertados; singularidades dos costumes alimentares e sedentarismo.
