Sanitary hygienic conditions of food services in Brazil: an integrative review

Resumo: The purpose of this review was to evaluate the scientific production related to sanitary hygienic conditions in food services in Brazil. The Databases used in the research: Scielo, Lilacs, and PubMed, with the search for scientific productions from 2013 to 2018. Inclusion criteria: complete scientific publications, addressing the themes of food hygiene, good practices in food services, prepared and published in national territory, with Portuguese language. Exclusion criteria were scientific productions published outside the established period, literature reviews, international publications, theses, dissertations, editorials, epidemiological bulletins and letters to the editor. 33 articles were found in the research, but only 24 met the eligibility criteria. There was a considerable increase in scientific production in the North and Northeast regions. However, there was an increase in non-conformities in relation to the knowledge of good practices on the part of the handlers, insufficient inspection in the establishments, greater conformity in relation to the facilities and equipment hygiene and a greater number of non-conformities in relation to the required legal documentation and mandatory records. . The number of publications covering the topic of hygiene and sanitary surveillance of food services has been growing in Brazil, making it necessary to intervene based on published studies so that the number of conformities is more and more adequate to RDC no. 216/2004, thus aiming at a considerable reduction of contamination risks. There is a need for frequent inspection of the bodies responsible for registrations and other legal documentation necessary for the active operation of food service establishments in the country.

Las Bases de Datos utilizadas en la investigación: Scielo, Lilacs y MedLine, con búsqueda de producciones científicas de 2013 a 2018. Criterios de inclusión: publicaciones científicas completas, abordando los temas de higiene alimentaria, buenas prácticas en servicios alimentarios, elaboradas y editado en territorio nacional, con lengua portuguesa. Los criterios de exclusión fueron: producciones científicas publicadas fuera del período establecido, revisiones de literatura, publicaciones internacionales, tesis, disertaciones, editoriales, boletines epidemiológicos y cartas al editor. Se encontraron 33 artículos en la investigación, pero solo 24 cumplieron con los criterios de elegibilidad. Hubo un aumento considerable de la producción científica en las regiones Norte y Nordeste. Sin embargo, se registró un aumento de no conformidades en relación al conocimiento de buenas prácticas por parte de los manipuladores, insuficiente inspección en los establecimientos, mayor conformidad en relación a la higiene de instalaciones y equipos y un mayor número de no conformidades en relación a la documentación legal requerida y registros obligatorios. El número de publicaciones que cubren el tema de higiene y vigilancia sanitaria de los servicios alimentarios ha ido creciendo en Brasil, por lo que es necesario intervenir con base en estudios publicados para que el número de conformidades sea cada vez más adecuado al RDC no. 216/2004, con el objetivo de reducir considerablemente los riesgos de contaminación. Es necesario realizar inspecciones frecuentes de los organismos responsables de los registros y demás documentación legal necesaria para el funcionamiento activo de los establecimientos de servicios alimentarios en el país.O objetivo desta revisão foi avaliar a produção científica relacionada às condições higiênico sanitárias nos serviços de alimentação do Brasil. As Bases de dados usadas na pesquisa foram: Scielo, Lilacs e MedLine, com busca de produções científicas no período de 2013 a 2018. Critérios de inclusão: publicações científicas completas, abordando os temas de higiene de alimentos, boas práticas em serviços de alimentação, elaboradas e publicadas em território nacional, com idioma português. Os de exclusão foram: produções científicas publicadas fora do período estabelecido, revisões de literatura, publicações internacionais, teses, dissertações, editoriais, boletins epidemiológicos e cartas ao editor. Foram encontrados na pesquisa 33 artigos, porém apenas 24 atenderam aos critérios de elegibilidade. Observou-se um aumento considerável da produção científica nas regiões Norte e Nordeste. No entanto houve um aumento de não conformidades em relação à conhecimento de boas práticas por parte dos manipuladores, fiscalização insuficiente nos estabelecimentos, maior conformidade em relação às instalações e higiene de equipamentos e maior número de não conformidade em relação às documentações legais exigidas e registros obrigatórios. O número de publicações abrangendo o tema de higiene e vigilância sanitária dos serviços de alimentação vem crescendo no Brasil, fazendo-se necessário uma intervenção baseada nos estudos publicados para que o número de conformidades esteja cada vez mais adequado à RDC n° 216/2004, visando assim uma diminuição considerável dos riscos de contaminação.
