Teaching nutritional education in the initial training of nutritionists: a brief review

Resumo: Nutritional Education is fundamental in the training of nutritionist professionals, given its pedagogical focus on modifying the eating behavior of specific individuals or groups, and its extremely important contribution to the understanding of the socio-cultural, economic and demographic phenomena that influence food. In this sense, this article sought to highlight the role of Nutrition Education teaching in the initial training of nutritionists. To this end, a bibliographical and exploratory survey was carried out on the Google Scholar databases and Catalog of Theses and Dissertations from the Coordination for the Improvement of Higher Education Personnel (CAPES), as well as books and documents related to Teaching and Nutritional Education. According to the results, it is seen that the nutritionist acts primarily as an educator, regardless of his area of activity, seeking change and maintaining healthy behavior. It has been seen that Nutritional Education, especially in practical activities, stimulates students' critical-reflective thinking, making learning based not only on the assimilation of content and later on the insertion of their practice, but also on the elaboration of their own ideas. However, it was noticed, from the analysis, that this discipline has been neglected, as it has a low workload in relation to others, not presenting substantial practical activities, in addition to being considered “light” and “funny” by most Thus, we consider that the teaching of Nutritional Education is a crucial part of the initial training of the nutritionist professional, as it acts as a stimulating factor for professional criticality and is related to interdisciplinary actions that cover the most varied areas of nutrition. Further research that shows this, given the scarcity of current studies on the subject.

Further research that shows this, given the scarcity of current studies on the subject.La Educación Nutricional es fundamental en la formación de profesionales nutricionistas, dado su enfoque pedagógico en la modificación del comportamiento alimentario de individuos o grupos específicos, y su contribución extremadamente importante para la comprensión de los fenómenos socioculturales, económicos y demográficos que influyen en los alimentos. En este sentido, este artículo buscaba resaltar el papel de la enseñanza de la Educación Nutricional en la formación inicial de nutricionistas. Con este fin, se realizó una encuesta bibliográfica y exploratoria en las bases de datos de Google Académico y el Catálogo de Tesis y Disertaciones de la Coordinación para la Mejora del Personal de Educación Superior (CAPES), así como libros y documentos relacionados con la enseñanza y la educación nutricional. Según los resultados, se ve que el nutricionista actúa principalmente como educador, independientemente de su área de actividad, buscando el cambio y manteniendo un comportamiento saludable. Se ha visto que la Educación Nutricional, especialmente en actividades prácticas, estimula el pensamiento crítico-reflexivo de los estudiantes, haciendo que el aprendizaje se base no solo en la asimilación de contenido y más tarde en la inserción de su práctica, sino también en la elaboración de sus propias ideas. Sin embargo, se observó, a partir del análisis, que esta disciplina se ha descuidado, ya que tiene una baja carga de trabajo en relación con otras, no presenta actividades prácticas sustanciales, además de ser considerada "ligera" y "divertida" por la mayoría Por lo tanto, consideramos que la enseñanza de la Educación Nutricional es una parte crucial de la formación inicial del profesional nutricionista, ya que actúa como un factor estimulante para la crítica profesional y está relacionada con acciones interdisciplinarias que cubren las más variadas áreas de la nutrición. La investigación adicional que muestra esto, dada la escasez de estudios actuales sobre el tema.A Educação Nutricional é fundamental na formação do profissional nutricionista, visto seu enfoque pedagógico na modificação do comportamento alimentar de indivíduos ou grupos específicos, e sua importantíssima contribuição para o entendimento dos fenômenos socioculturais, econômicos e demográficos que influenciam a alimentação. Nesse sentido, o presente artigo buscou evidenciar o papel do ensino da Educação Nutricional na formação inicial de nutricionistas. Para tanto, foi realizado um levantamento bibliográfico e exploratório nas bases dados Google Acadêmico e Catálogo de Teses e Dissertações da Coordenação de Aperfeiçoamento de Pessoa de Nível Superior (CAPES), como também foram utilizados livros e documentos relacionados ao Ensino e à Educação Nutricional. De acordo com os resultados, é visto que o nutricionista atua primordialmente como educador, independentemente de sua área de atuação, buscando a mudança e a manutenção do comportamento saudável. Tem se visto, que a Educação Nutricional, sobretudo nas atividades práticas, estimula o pensamento crítico-reflexivo dos alunos, tornando a aprendizagem baseada não só na assimilação de conteúdos e posteriormente na inserção da prática destes, mas também na elaboração de ideias próprias. Contudo, percebeu-se, a partir das análises, que essa disciplina tem sido negligenciada, pois apresenta baixa carga horária de trabalho em relação à outras, não apresentando atividades práticas substanciais, além de ser considerada “leve” e “engraçada" pela maioria dos alunos. Assim, consideramos que o ensino da Educação Nutricional é parte crucial da formação inicial do profissional nutricionista, pois atua como fator estimulante da criticidade profissional e relaciona-se à ações interdisciplinares que abrangem as mais variadas áreas da nutrição.
