Consumption and use of water in freshwater fish slaughterhouses

Resumo: The rational use of water in productive activities has been the relevant factor for food production. The consumption of water in the industrialization of cattle, pigs and poultry is known in the literature, and it is necessary to expand the studies for the industrialization of fish. This study aimed to evaluate the average water consumption in the production processes in the industrialization of tilapia fillet, in small freshwater fish slaughterhouses. In this work, the treatment of effluents and the characteristics of the water resources used were also analyzed. Semi-structured interviews and visits to establishments were conducted in fifteen slaughterhouses in the western region of Paraná. The establishments evaluated were divided into groups according to their physical structure and the seal of the health inspection system for products of animal origin. The results point to the average need of 19.64 liters of water to produce 1 kg of tilapia fillet. In general, the effluents are not monitored, requiring improvements in the waste treatment process, avoiding environmental impacts derived from the industrialization of tilapia.

El consumo de agua en la industrialización de bovinos, porcinos y aves es conocido en la literatura, siendo necesario ampliar los estudios para la industrialización de pescado. Este estudio tuvo como objetivo evaluar el consumo promedio de agua en los procesos productivos en la industrialización del filete de tilapia, en pequeños mataderos de peces de agua dulce. En este trabajo también se analizó el tratamiento de los efluentes y las características de los recursos hídricos utilizados. Se realizaron entrevistas semiestructuradas y visitas a establecimientos en quince mataderos de la región occidental de Paraná. Los establecimientos evaluados se dividieron en grupos según su estructura física y el sello del sistema de inspección sanitaria de productos de origen animal. Los resultados apuntan a la necesidad promedio de 19,64 litros de agua para la producción de 1 kg de filete de tilapia. En general, los efluentes no son monitoreados, requiriendo mejoras en el proceso de tratamiento de residuos, evitando impactos ambientales derivados de la industrialización de la tilapia.O uso racional da água nas atividades produtivas tem sido o fator relevante para produção de alimentos. O consumo de água na industrialização de bovinos, suínos e aves são conhecidos na literatura, sendo necessário expandir os estudos para a industrialização de pescado. Este trabalho teve como objetivo avaliar o consumo médio de água em processos produtivos na industrialização do filé de tilápia, em entrepostos de pescado dulciaquícola de pequeno e médio porte.  O tratamento de efluentes e características dos recursos hídricos utilizados também foram analisados.  Foram efetuadas entrevistas semiestruturadas em quinze entrepostos da região oeste do Paraná. Os entrepostos avaliados foram divididos em grupos de acordo com sua estrutura física e o selo do sistema de inspeção sanitária de produtos de origem animal.
