Production and industrial performance of small fish slaughterhouses in western Paraná

Resumo: The western region of Paraná stands out in Brazilian fish farming as the largest center of fish production in ponds and industrialization for fillet production, concentrating 24 small, medium, and large fish slaughterhouses. The general objective of the research was to survey the technical parameters of the industrialization of tilapia in six small-scale slaughterhouses in western Paraná. Among the specific objectives: a) survey of the volume of processed fish and fillets produced; b) obtaining labor use and yield parameters; c) evaluate the purchase of raw material and the sale of fillets; and d) verify aspects about transportation logistics. The parameters evaluated brought important technical subsidies, which demonstrate that small industrial plants are an important instrument for the outflow of aquaculture production. The pisciculture in the cities of Toledo, Marechal Candido Rondon, Pato Bragado, and Ouro Verde do Oeste in the western region of Paraná generates an estimated annual income of R$ 71,039,430.00 which provides income to fish farmers, whether they are linked as partners or even independent, and can be considered an important vector of development in the cities of the region, being an emerging agro-industrial chain that provides income generation, employment, and diversification of agricultural production.

El objetivo general de la investigación fue relevar los parámetros técnicos de la industrialización de tilapia en seis mataderos de pequeña escala del oeste de Paraná. Entre los objetivos específicos: a) relevar el volumen de pescado procesado y de filetes producidos; b) obtener parámetros de uso de mano de obra y rendimiento; c) evaluar la compra de materia prima y la venta de filetes; y d) verificar aspectos sobre la logística de transporte. Los parámetros evaluados aportaron importantes subsidios técnicos, que demuestran que las pequeñas plantas industriales son un importante instrumento para la salida de la producción acuícola. La piscicultura en las ciudades de Toledo, Marechal Candido Rondon, Pato Bragado y Ouro Verde do Oeste, en la región oeste de Paraná, genera una renta anual estimada en R$ 71.039.430,00 que proporciona ingresos a los piscicultores, ya sean vinculados como socios o incluso independientes, y puede considerarse un importante vector de desarrollo en las ciudades de la región, siendo una cadena agroindustrial emergente que proporciona generación de ingresos, empleo y diversificación de la producción agrícola.A região oeste do Paraná destaca-se na piscicultura brasileira como o maior polo de produção de peixes em viveiros escavados e industrialização para produção de filés, concentrando 24 entrepostos de pescado de pequeno, médio e grande porte. O objetivo geral da pesquisa foi o levantamento de parâmetros técnicos da industrialização de tilápias em seis entrepostos de pequeno porte do oeste do Paraná. Entre os objetivos específicos destacaram-se: a) o levantamento do volume de peixes processados e filé produzido; b) a obtenção de parâmetros de uso e rendimento da mão-de-obra; c) avaliar a compra de matéria prima e a venda de filés; e d) verificar aspectos sobre a logística de transporte. Os parâmetros avaliados trouxeram importantes subsídios técnicos, que demonstram que as pequenas plantas industriais são importante instrumento de escoamento da produção aquícola.
