Evaluation of the acceptability of vegetables in the microgreen stage by remaining ingestion in lapinha Spa, municipality of Lapa, state of Paraná, Brazil

Resumo: Microgreens are young vegetable plants harvested prematurely that have been gaining popularity in conventional and gourmet cooking due to their nutritional and sensory properties. This study aimed to evaluate the acceptability of microgreens of lettuce (Lactuca sativa L.), dry cress (Lepidium sativum L.), amaranth (Amaranthus caudatus L.), beet (Beta vulgaris L.), cabbage (Brassica oleracea L.) and sunflower (Helianthus annuus L.) by guests of Lapinha SPA, a physical and mental health invigoration establishment located in the municipality of Lapa, state of Paraná. To assess the acceptability of these vegetables, the rest-ingestion methodology was used. The results obtained showed that the acceptability of the species varied between 84.84% and 96.60%, being considered excellent for all offered species. The analysis of variance followed by the Tukey test showed that there was a statistically significant difference in the acceptability index, with the best accepted species in decreasing order, were the amaranth microgreens (mean left = 2.16 g), cabbage (left over) medium = 5.12 g), dry cress (leftover = 6.40 g), lettuce (leftover = 6.60 g), beets (leftover = 6.84 g), and sunflower (leftover = 9.76 g). These plants have the potential to be incorporated into the diet of customers of SPA's establishments, since they add different nutritional and aesthetic value to the dishes offered in cooking.

Este estudio tuvo como objetivo evaluar la aceptabilidad de microgreens de lechuga (Lactuca sativa L.), berro seco (Lepidium sativum L.), amaranto (Amaranthus caudatus L.), remolacha (Beta vulgaris L.), repollo (Brassica oleracea L.) y girasol (Helianthus annuus L.) por huéspedes de Lapinha SPA, un establecimiento de fortalecimiento de la salud física y mental ubicado en el municipio de Lapa, estado de Paraná. Para evaluar la aceptabilidad de estos vegetales, se utilizó la metodología de descanso-ingestión. Los resultados obtenidos mostraron que la aceptabilidad de las especies varió entre 84.84% y 96.60%, siendo considerada excelente para todas las especies ofrecidas. El análisis de varianza seguido por la prueba de Tukey mostró que hubo una diferencia estadísticamente significativa en el índice de aceptabilidad, con las especies mejor aceptadas en orden decreciente, fueron los microgreens de amaranto (media izquierda = 2,16 g), repollo (sobrante) medio = 5.12 g), berro seco (restos = 6.40 g), lechuga (restos = 6.60 g), remolacha (restos = 6.84 g) y girasol (restos = 9,76 g). Estas plantas tienen el potencial de incorporarse a la dieta de los clientes de los establecimientos de SPA, ya que agregan un valor nutricional y estético diferente a los platos que se ofrecen en la cocina.Microgreens são plantas jovens de hortaliças colhidas prematuramente que vêm ganhando popularidade na culinária convencional e gourmet devido às suas propriedades nutricionais e sensoriais. Este estudo teve como objetivo avaliar a aceitabilidade de microgreens de alface (Lactuca sativa L.), agrião-do-seco (Lepidium sativum L.), amaranto (Amaranthus caudatus L.), beterraba (Beta vulgaris L.), couve (Brassica oleracea L.) e girassol (Helianthus annuus L.) pelos hóspedes do Lapinha SPA, um estabelecimento de revigoramento da saúde física e mental localizado no município de Lapa, estado do Paraná. Para avaliar a aceitabilidade desses vegetais foi utilizado a metodologia de resto-ingesta. Os resultados obtidos mostraram que a aceitabilidade das espécies variou entre 84,84% e 96,60%, sendo considerada ótima para todas as espécies ofertadas. A análise de variância seguida pelo teste de Tukey mostrou que houve diferença estatisticamente significante no índice de aceitabilidade, sendo que as espécies mais bem aceitas em ordem decrescente, foram os microgreens de amaranto (sobra média = 2,16 g), couve (sobra-média = 5,12 g), agrião-do-seco (sobra-média = 6,40 g), alface (sobra-média = 6,60 g), beterraba (sobra-média = 6,84 g), e girassol (sobra-média = 9,76 g).
