Morphology, centesimal composition and changes during tanning process of the Nile tilapia skin

Resumo: The aim of the study was to describe the morphology and centesimal composition of the Nile tilapia skin and the changes that occur throughout the tanning process. Samples (middle dorsal region) were taken at the end of each stage of the tanning process, for analysis of light microscopy and scanning electron microscopy. Analyzes of the proximate composition of skins related to fish of three weight classes (500 to 600g; 601 to 700 g and 701 to 800 g) were also carried out. It was observed that the skin of the Nile tilapia has a structural pattern common to teleost fish. Through histochemical techniques, the presence of neutral carbohydrates in the mucous cells found in the superficial layer of the epidermis has been proven. The arrangement and orientation of the collagen fibers of the superficial dermis was observed, as well as of the compact dermis and the organization of the collagen fibers and of the protective insoles in the insertion of the scales. It is possible to observe the insertion of the scale in the dermal tissue, as well as its morphology. It was observed the swelling and opening of the fibrous structure at the beginning of the process, and mainly, the separation of the layers of collagen fibers throughout the process and the action of the oils of the greasing at the end of the tanning. There was a difference in the proximate composition of the skins, only in terms of lipid content. By analyzing the morphology of the skin, in relation to the organization and disposition of collagen fibers and the dermal structure during tanning, it can be inferred that the study of the histological structure of the material is fundamental for analyzing the strength of the leather.

Se tomaron muestras (región dorsal media) al final de cada etapa del proceso de bronceado, para su análisis por microscopía óptica y microscopía electrónica de barrido. También se realizaron análisis de la composición próxima de pieles referentes a peces de tres clases de peso (500 a 600 g; 601 a 700 gy 701 a 800 g). Se observó que la piel de la tilapia del Nilo tiene un patrón estructural común a los peces teleósteos. Mediante técnicas histoquímicas se confirmó la presencia de carbohidratos neutros en las células mucosas que se encuentran en la capa superficial de la epidermis. Se observó la disposición y orientación de las fibras de colágeno en la dermis superficial, así como en la dermis compacta, y la organización de las fibras de colágeno y cubreobjetos protectores en la inserción de escamas. Es posible observar la inserción de la escala en el tejido dérmico, así como su morfología. Se observó el hinchamiento y apertura de la estructura fibrosa al inicio del proceso, y principalmente, la separación de las capas de fibras de colágeno a lo largo del proceso y la acción de los aceites ingresantes al final del proceso de curtido. Hubo una diferencia en la composición próxima de las pieles, solo en términos de contenido de lípidos. Al analizar la morfología de la piel, en relación con la organización y disposición de las fibras de colágeno y la estructura dérmica durante el bronceado, se puede inferir que el estudio de la estructura histológica del material es fundamental para el análisis de la resistencia del cuero.O objetivo do estudo foi descrever a morfologia e a composição centesimal da pele de tilápia do Nilo e as alterações que ocorrem ao longo do processo de curtimento. Foram retiradas amostras (região dorsal média) no término de cada etapa do processo de curtimento, para análises de microscopia de luz e microscopia eletrônica de varredura. Também foram realizadas análises da composição centesimal de peles referentes a peixes de três classes de peso (500 a 600g; 601 a 700 g e 701 a 800 g). Observou-se que a pele da tilápia do Nilo possui um padrão estrutural comum aos peixes teleósteos. Através de técnicas histoquímicas comprovou-se a presença de carboidratos neutros nas células mucosas encontradas na camada superficial da epiderme. Foi observado o arranjo e orientação das fibras colágenas da derme superficial, bem como da derme compacta e a organização das fibras colágenas e das lámelulas de proteção na inserção das escamas. Pode-se observar a inserção da escama no tecido dérmico, assim como, a sua morfologia. Observou-se o intumescimento e abertura da estrutura fibrosa no início do processo, e principalmente, a separação das camadas de fibras colágenas ao longo do processo e a ação dos óleos do engraxe ao término do curtimento. Houve diferença na composição centesimal das peles, apenas quanto ao teor de lipídios.
