Diagnosis of the chemical quality of wines produced in the southern region of Minas Gerais state, Brazil

Resumo: The southern region of Minas Gerais state, Brazil, is traditionally a producer of table wines made from the grape varieties Bordô or Folha de Figo, Jacquez and Niágara; however, in recent years, this tradition has been forgotten, with some of the vineyards and wineries extinct. The current state of the art of the region's wines, diagnosed through physical-chemical analysis, needs to be known to understand the quality of the beverages and the observance of an eventual identity of the local products, which can contribute to obtaining a seal of indication of origin and strengthening of the region's wine tradition. To this, 30 samples of wines from the region were collected and submitted a several analysis: pH, total titratable acidity, volatile acidity, fixed acidity, ethanol, free sulfur dioxide, total sulfur dioxide, sulfates, dry extract, ash, phenolic compounds, anthocyanins, glucose, glycerol, tannins, reducing sugars, total reducing sugars, color intensity, and tonality. The results showed that there is a great difference in the composition of the analyzed wines, given the great variability of the samples, with wines produced from different grapes. Two samples showed ethanol values outside the limits established by Brazilian legislation. Three samples showed values of total acidity above the allowed and seven showed values of volatile acidity above the maximum limit established by law. The parameters of color intensity and hue, the only sensory characteristics analyzed, showed great variability of the values, accentuating the lack of standardization of the analyzed beverages. The results indicate that, in order to obtain a seal of geographic identity, there is a need to adapt some aspects of production.

Es necesario conocer el estado actual de los vinos de la región, diagnosticado mediante análisis físico-químicas, para comprender la calidad de las bebidas y la observancia de una eventual identidad de los productos locales, lo que puede contribuir a la obtención de un sello de indicación de origen y fortalecimiento de la tradición vitivinícola de la región. Para ello, se recolectaron 30 muestras de vinos de la región y se sometieron a análisis de pH, acidez total titulable, acidez volátil, acidez fija, etanol, dióxido de azufre libre, dióxido de azufre total, sulfatos, extracto seco, cenizas, compuestos fenólicos, antocianinas, glucosa, glicerol, taninos, azúcares reductores, azúcares reductores totales, intensidad de color y matiz. Los resultados mostraron que existe una gran diferencia en la composición de los vinos analizados, dada la gran variabilidad de las muestras, con vinos elaborados a partir de diferentes uvas. Dos muestras mostraron valores de etanol fuera de los límites establecidos por la legislación brasileña. Tres muestras presentaron valores de acidez total por encima de lo permitido y siete presentaron valores de acidez volátil por encima del límite máximo establecido por ley. Los parámetros de intensidad y tonalidad del color, únicas características sensoriales analizadas, mostraron gran variabilidad de los valores, acentuando la falta de estandarización de las bebidas analizadas. O atual estado da arte dos vinhos da região, diagnosticado mediante análises físico-químicas, precisa ser conhecido para o entendimento da qualidade das bebidas e da observância de uma eventual identidade dos produtos locais, que pode contribuir para a obtenção de um selo de indicação de origem e o fortalecimento da tradição vinícola da região. Para tanto, foram coletas 30 amostras de vinhos da região que foram submetidos às análises de pH, acidez total titulável, acidez volátil, acidez fixa, etanol, dióxido de enxofre livre, dióxido de enxofre total, sulfatos, extrato seco, cinzas, compostos fenólicos, antocianinas, glicose, glicerol, taninos, açúcares redutores, açúcares redutores totais, intensidade de cor e tonalidade. Os resultados demostraram que existe uma grande diferença na composição dos vinhos analisados, dada a grande variabilidade das amostras, com vinhos produzidos a partir de diferentes uvas. Duas amostras apresentaram valores de etanol fora dos limites estabelecidos pela legislação brasileira. Três amostras apresentaram valores de acidez total acima do permitido e sete apresentaram valores de acidez volátil acima do limite máximo estabelecido por lei. Os parâmetros de intensidade de cor e tonalidade, únicas características sensoriais analisadas, apresentaram grande variabilidade dos valores, acentuando a falta de padronização das bebidas analisadas.
