Resumo: | Although viticulture is an activity that has been carried out in the region of Planalto Norte Catarinense, it is in recent years that there has been a greater incentive and technological advances in vine cultivation and grape processing, and thus, information on the enological technologies used in winemaking. In this context, the objective is to characterize the winemaking process in the Planalto Norte Catarinense. The present work was carried out by the Federal Institute of Santa Catarina - Campus Canoinhas through qualitative research, within a descriptive perspective. The collection of information took place between the months of June and August 2019, through a questionnaire. Rural producers who cultivate the vine and make or intend to make wines participated in the present work. The elaboration of wines in the region of Planalto Norte Catarinense is a reality, however, there was a small number of producers who use oenological inputs and techniques and adequate care during the elaboration processes that aim to obtain a quality wine. This may be directly related to the low number of producers who at no time had a course, qualification, or training on winemaking. Therefore, it is necessary actions that aim to empower producers, guiding them on techniques and care to be adopted during the elaboration process, as well as the importance of using oenological inputs to obtain high quality wines. |

En este contexto, el objetivo de este trabajo es caracterizar el proceso de vinificación en la región Planalto Norte de Santa Catarina. El presente trabajo fue realizado por el Instituto Federal de Santa Catarina - Campus Canoinhas a través de una investigación cualitativa, en una perspectiva descriptiva. La recolección de información se llevó a cabo entre los meses de junio y agosto de 2019, a través de un cuestionario. En el presente trabajo participaron productores rurales que cultivan la vid y elaboran o pretenden elaborar vinos. La elaboración de vinos en la región del Planalto Norte Catarinense es una realidad, sin embargo, existió un reducido número de productores que utilizan insumos enológicos, técnicas y cuidados adecuados durante los procesos de elaboración que apuntan a obtener un vino de calidad. Esto puede estar directamente relacionado con el alto número de productores que en ningún momento tuvieron un curso, titulación o capacitación en enología. Por lo tanto, son necesarias acciones que apunten a capacitar a los productores, orientándolos sobre las técnicas y cuidados a adoptar durante el proceso de elaboración, así como la importancia del uso de insumos enológicos para la obtención de vinos de alta calidad.Apesar da vitivinicultura ser uma atividade que vem sendo desempenhada na região do Planalto Norte Catarinense, é nos últimos anos que se verifica um maior incentivo e avanços tecnológicos na cultura da videira e no processamento das uvas, e dessa forma, são escassas as informações sobre as práticas enológicas empregadas na elaboração do vinho. Nesse contexto, tem-se como objetivo deste trabalho caracterizar o processo de elaboração de vinhos na região do Planalto Norte Catarinense. O presente trabalho foi realizado pelo Instituto Federal de Santa Catarina – Campus Canoinhas através de uma pesquisa qualitativa, dentro de uma perspectiva descritiva. A coleta das informações ocorreu entre os meses de junho e agosto de 2019, através de um questionário. Participaram do presente trabalho produtores rurais que cultivam a videira e elaboram ou pretendem elaborar vinhos. A elaboração de vinhos na região do Planalto Norte Catarinense é uma realidade, no entanto, verificou-se um pequeno número de produtores que utilizam insumos enológicos, técnicas e cuidados adequados durante os processos de elaboração que visam a obtenção de um vinho de qualidade. Isso pode estar diretamente relacionado ao alto número de produtores que em nenhum momento realizou curso, capacitação ou treinamento sobre elaboração de vinhos.
