Microbiological analysis of Salmonella sp. in beef and chicken marketed in Mossoró-RN

Resumo: | Meat is considered one of the most important foods in the human diet, however it is an excellent means of contamination by pathogenic microorganisms due to its intrinsic characteristics. Considering salmonellosis as the major foodborne disease with the greatest impact on public health, the purpose of this study was to evaluate the microbiological quality of beef and chicken, isolating and identifying the existence of Salmonella sp. in pieces sold in several neighborhoods in the city of Mossoró-RN. To conduct the experiments, samples were acquired in 30 butcher shops (supermarket, grocery stores and public market) at random, since some neighborhoods had a higher concentration of establishments than others, especially the Santo Antônio neighborhood and the Paredões neighborhood (where locates the public market). Sixty samples were collected, 30 of beef (soft thigh) and 30 of chicken (breast). For detection of Salmonella sp., the procedures described in normative instruction No. 30 of 2018 were followed. As a result, a total of 18 (30%) positive samples were obtained for Salmonella sp. where 12 (20%) were chicken and 6 (10%) were beef. With this, it is concluded that there is a significant positive percentage in relation to the amount of samples analyzed, since these bacteria are considered a public health problem, making it necessary for greater attention by public agencies to control the quality of these products, since cases of contamination are associated with irregularities in the workspace, inadequate hygiene, storage errors and improper temperature. |

Considerando a la salmonelosis como la principal enfermedad transmitida por alimentos y con mayor impacto en la salud pública, el propósito de este estudio fue evaluar la calidad microbiológica de carne de res y pollo, aislando e identificando la existencia de Salmonella sp. en piezas vendidas en varios barrios de la ciudad de Mossoró/RN. Para realizar los experimentos, se adquirieron muestras en 30 carnicerías (supermercado, pulperías y mercado público) al azar, ya que algunos barrios tenían una mayor concentración de establecimientos que otros, especialmente el barrio Santo Antônio y el barrio Paredões (donde se ubica el público). mercado). Se recolectaron 60 muestras, 30 de res (muslo blando) y 30 de pollo (pechuga). Para la detección de Salmonella sp. se siguieron los procedimientos descritos en la instrucción normativa N° 30 de 2018. Como resultado se obtuvo un total de 18 (30%) muestras positivas para Salmonella sp. donde 12 (20%) fueron de pollo y 6 (10%) de res. Con esto, se concluye que existe un porcentaje positivo significativo en relación a la cantidad de muestras analizadas, ya que estas bacterias son consideradas un problema de salud pública, siendo necesaria una mayor atención por parte de los organismos públicos para controlar la calidad de estos productos. ya que los casos de contaminación están asociados a irregularidades en el espacio de trabajo, higiene inadecuada, errores de almacenamiento y temperatura inadecuada.As carnes são consideradas um dos alimentos mais importantes da dieta humana, todavia é um excelente meio de contaminação por microrganismos patogênicos devido as suas características intrínsecas. Considerando-se a salmonelose como a maior doença de origem alimentar e de maior impacto na saúde pública, o propósito desse estudo foi avaliar a qualidade microbiológica de carne bovina e frango, isolando e identificando a existência de Salmonela sp. em peças comercializadas em diversos bairros do município de Mossoró-RN. Para a condução dos experimentos as amostras foram adquiridas em 30 açougues (supermercado, mercadinhos e mercado público) de forma aleatória, uma vez que alguns bairros apresentavam maior concentração de estabelecimentos que outros, com destaque ao bairro Santo Antônio e o bairro Paredões (onde se localiza o mercado público). Foram coletadas 60 amostras, 30 de carne bovina (coxão mole) e 30 de frango (peito). Para detecção de Salmonela sp. seguiu-se os procedimentos descritos na instrução normativa n° 30 de 2018. Como resultado, obteve-se o total de 18 (30%) amostras positivas para Salmonela sp. onde 12 (20%) foi de frango e 6 (10%) de carne bovina.
