Evaluation of quality control of fruits and vegetables commercialized at the free fair in Valença/RJ

Resumo: Open markets stand out for selling fresh products of animal and vegetable origin, most of the time free of pesticides. However, the failure to apply the good practices provided for by legislation that guarantee the quality and safety of food, can interfere with the sensory characteristics of the product offered, and linked to these factors, open markets can offer food with reduced quality, resulting in waste, monetary losses and deposits of these residues in the environment. This article aims to assess quality control in the trade of fruits and vegetables sold at Feira Livre in Valença / RJ. This was a descriptive observational study, based on Resolutions RDC n°. 216/2004, RDC n°. 275/2002, Ordinance MS n°. 326/1997, and Ordinance MS n°. 1428/1993. It was possible to observe, that the marketers had the minimum knowledge about the good practices, hygiene and conservation of the vegetables that they offered for sale, as well as how to properly dispose of the commercialized fruits and vegetables. It was verified that part of the garbage produced at the fair, corresponded to food not sold on the spot. Therefore, knowledge about the points mentioned above results in the offer of quality food for sale, generating a reduction in food waste and financial losses to marketers. Faced with this issue at the end of the work, a booklet was developed with all this information that was distributed, as a way of raising awareness and offering knowledge to marketers.

Sin embargo, la falta de aplicación de las buenas prácticas previstas por la legislación que garantizan la calidad e inocuidad de los alimentos, puede interferir en las características sensoriales del producto ofertado, y ligado a estos factores, los mercados abiertos pueden ofrecer alimentos con calidad reducida, resultando en desperdicio, pérdidas monetarias y depósitos de estos residuos en el medio ambiente. Este artículo tiene como objetivo evaluar el control de calidad en el comercio de frutas y hortalizas vendidas en Feria Libre en Valença / RJ. Este fue un estudio observacional descriptivo, basado en las Resoluciones RDC n°. 216/2004, RDC n°. 275/2002, Ordenanza MS n°. 326/1997 y Ordenanza MS n°. 1428/1993. Se pudo observar, que los comercializadores tenían el mínimo conocimiento sobre las buenas prácticas, higiene y conservación de las hortalizas que ofrecían a la venta, así como cómo disponer adecuadamente las frutas y hortalizas comercializadas. Se verificó que parte de la basura producida en la feria, correspondía a alimentos no vendidos en el lugar. Por tanto, el conocimiento de los puntos antes mencionados redunda en la oferta de venta de alimentos de calidad, generando una reducción del desperdicio de alimentos y pérdidas económicas para los comercializadores. Ante este tema al final del trabajo, se elaboró un cuadernillo con toda esta información que se distribuyó, como una forma de concienciar y ofrecer conocimiento a los comercializadores.As feiras livres se  destacam por comercializarem produtos in natura de origem animal e vegetal, na maioria das vezes livres de agrotóxicos. No entanto, a não aplicação das boas práticas previstas pelas legislações que garantem a qualidade e a segurança do alimento, podem interferir nas características sensoriais do produto oferecido, e atrelado a esses fatores as feiras livres podem oferecer alimentos com a qualidade reduzida, resultando em desperdícios, prejuízos monetários e depósitos desses resíduos no meio ambiente. Este artigo tem como objetivo, avaliar o controle de qualidade no comércio de frutas e hortaliças comercializadas na Feira Livre de Valença/RJ. Tratou-se de um estudo observacional descritivo,  baseado nas Resoluções RDC n° 216/2004, RDC n° 275/2002, Portaria MS n° 326/1997, e Portaria MS n° 1428/1993. Foi possível observar, que os feirantes possuíam o mínimo de conhecimento sobre as boas práticas, higienização e conservação dos vegetais que eles ofereciam para venda, e ainda de  como deveria ser feito o descarte correto das frutas e hortaliças comercializadas. Foi verificado que parte do lixo produzido na feira, correspondiam aos alimentos não comercializados no local. Logo, o conhecimento sobre os pontos citados acima resultam na oferta de alimentos com qualidade para venda, gerando diminuição de desperdícios de alimentos e prejuízos financeiros aos feirantes.
