ENVIRONMENTAL MANAGEMENT FROM BIODYNAMIC PRODUCTION: AN ALTERNATIVE TO SUSTAINABILITY IN A SANTA CATARINA WINERY

Resumo: From a case study at Vinícola Santa Augusta (Santa Augusta Winery) - VSA, this paper aims to understand the process of biodynamic production and its contribution to the sustainability of the enterprise and the environment. VSA has developed sustainable actions in its production process by growing biodynamic grapes, to meet a strategic need of the market, but with no intention of developing an environmental management strategy in the process. This study is a qualitative, descriptive and exploratory research, with theoretical support based on Biodynamics concepts and their contributions to the environment, beyond Environmental Management concepts from the perspective of Rohrich and Cunha (2004) and Maimon (1994).This article aims at proposing the implementation of an environmental management by the company, from the gradual adoption of sustainable practices and the maintenance of biodynamic farming in its production process. This research showed that biodynamic production is still modest in Brazil, mainly in the wine industry, and VSA is a pioneer in the segment. The study also allows for the understanding of Biodynamics as an alternative for sustainable production, conservation characteristics of non-renewable resources and respect for the limits of nature, besides allowing for quality products, with high added value.

El VSA ha desarrollado acciones sostenibles en su proceso de producción por cultivo de uvas biodinámicas, debido a la necesidad estratégica del mercado, pero sin la intención de desarrollar un proceso de estrategia de gestión ambiental. Este estudió es una investigación cualitativa , descriptiva y exploratoria , con el apoyo teórico basado en los conceptos de la biodinámica y sus contribuciones al medio ambiente , más allá de los conceptos de gestión ambiental desde la perspectiva de Rohrich y Cunha (2004) y Maimón (1994) . Este artículo en AIMS propone la implantación de un sistema de gestión ambiental de la empresa, a partir de la adopción gradual de las prácticas sostenibles y el mantenimiento de la agricultura biodinámica en su proceso productivo. Esta investigación permitió que la producción biodinámica, sea aún modesta en Brasil, principalmente en la industria del vino , además de ser el VSA , el pionero en el segmento. El estudio entiende también la biodinámica como una alternativa para la producción sostenible, las características de conservación de los recursos no renovables y el respeto a los límites de la naturaleza, además de proporcionar la obtención de productos de calidad, común alto valor añadido. A partir de um estudo de caso na Vinícola Santa Augusta (VSA), este artigo buscou entender o processo de produção biodinâmica e sua contribuição para a sustentabilidade do empreendimento e do ambiente. A VSA desenvolveu ações sustentáveis em seu processo produtivo por meio do cultivo de uvas biodinâmicas, devido a uma necessidade estratégica de mercado, porém sem a intenção de desenvolver uma estratégia de gestão ambiental desse processo. O presente trabalho é uma pesquisa qualitativa, descritiva e exploratória, com sustentação teórica baseada nos conceitos da biodinâmica e suas contribuições para o meio ambiente, além do conceito de gestão ambiental sob a ótica de autores como Rohrich e Cunha (2004) e Maimon (1994). Este artigo tem o objetivo de propor a implantação de uma gestão ambiental por parte da empresa, a partir da adoção gradual de práticas sustentáveis e da manutenção do cultivo biodinâmico em seu processo produtivo. A pesquisa possibilitou concluir que a produção biodinâmica ainda é tímida no Brasil, principalmente na vitivinicultura, sendo a VSA pioneira no segmento.
