The agribusiness sectors are increasingly enhancing the technological knowledge within their fields.Not only the competition, which is increasingly fierce, but also for survival in the market. Whenproposing planning for rural enterprise, in business, so you should consider that in this type ofproduction system, and there is a much more significant number of random variables, there is stillmuch less information readily available and that they neither always mirror the reality of fact, givenits momentum. The Petri net, because it is a technique where significant advances have obtained theinformation network is complex and subject to various factors, such as the agribusiness, and toobtain a better development of agroindustrial projects in parallel with the decrease of economicrisks faced by this sector, the objective is then, with this work to develop a risk managementmethodology based on concepts of Petri nets, to be introduced in the management of foodprocessing industries, so that eventually there is a contribution to this area, and that therefore it cangradually evolve to maturity of risk management in projects in the agribusiness entities.
