Resumo: | This work aimed to analyzes the flour wheat’s quality control, through reports issued located at a pasta industry from West of Paraná State in Brazil. This study is very important to create an integrated and shared quality management system, according Brazilian legislation refered to starches, flours and wheat middlings, related alimentary security. It was used as parameter the counting of Bacillus cereus in wheat flour, and technical skill. It was evaluated the capacity to detect variations and to analyze the results of Bacillus cereus counting, applying statistical analysis. Key words: Control statistical process, food industry, productive process Esse trabalho teve por objetivo avaliar o processo de controle da qualidade da matéria-prima farinha de trigo, por meio do estudo de dados contidos em laudos de análises laboratoriais deste produto realizados por uma indústria de massas alimentícias, localizada na região oeste do estado do Paraná. O interesse em analisar os dados desta matéria-prima surgiu pela necessidade em se estabelecer um sistema de gestão da qualidade integrada, compartilhada e em conformidade com os padrões estabelecidos pela Legislação Nacional vigente para derivados de amidos, farinhas e farelos. O parâmetro de análise monitorado na matéria-prima farinha de trigo estudada foi: a eficiência dos resultados emitidos pelos técnicos quanto à precisão das analises para contagem de Bacillus cereus na matéria-prima farinha de trigo. Os resultados indicaram que a precisão das análises realizadas estão em conformidade com aquela exigida pela norma fiscalizadora e com os métodos estatísticos aplicados.
