Resumo: The Amazon biome has fruit with unique sensory characteristics and high concentration of nutrients. However, despite their nutritional and economic potential, these fruits lack an established commercialized market base. These fruits have yet to be marketed properly because they are almost always picked from the wild. An additional consequence is that technical and scientific data on them is scarce or often non-existent. In light of these factors, the aim of this study was to evaluate the physical-chemical composition of pulp from the abiu, achachairú, araza, bilimbi, and yellow mangosteen fruits from the Brazilian Amazon Biome in different harvests. The fruit pulps were evaluated in terms of their total soluble solid content, titratable acidity levels, total and reducing sugars and pH. Ascorbic acid content, total anthocyanin content, yellow flavonoid content, total carotenoid content, total phenolic compounds and total antioxidant activity (capturing the ABTS·+ free radical, as well as by capturing the DPPH. free radical, and through the measurement of iron reducing activity via the FRAP assay) of the fruit pulps were also determined. The results of physico-chemical parameters of the pulp fruits in different harvests were analyzed by the T Student test, variance analysis followed by Tukey test, correlation analysis and principal components analysis using the Statistica 7.0 software. There were differences in the physico-chemical parameters of fruit pulp evaluated in different harvests. The achachairú pulp had the highest quantity of total phenolic compounds and for the most significant antioxidant activity; this study also found that the araza pulp had the highest carotenoid content and that the yellow mangosteen pulp had the highest yellow flavonoid content. Entretanto, algumas espécies frutíferas por não constituírem uma cultura comercialmente estabelecida, uma vez que são decorrentes, quase que em sua totalidade, de atividade extrativista, prevalecem à escassez ou mesmo a ausência de dados técnico-científicos. Assim, este trabalho teve como objetivo caracterizar fisico-quimicamente a polpa das frutas de abiu, achachairu, araçá-boi, biri-biri e mangostão-amarelo procedentes do Bioma Amazônia, em diferentes safras. As polpas foram avaliadas quanto aos teores de sólidos solúveis totais, acidez total titulável, açúcares (redutores e totais) e pH. Também foram avaliados os teores de ácido ascórbico, antocianinas, flavonóides amarelos, carotenóides totais, compostos fenólicos totais e atividade antioxidante total (pela captura do radical livre pelos métodos ABTS.+ e DPPH., e pela redução do ferro pelo método FRAP). Os resultados dos parâmetros físico-químicos das polpas das frutas nas diferentes safras foram submetidos ao teste T de Student, análise de variância seguida de teste de Tukey, bem como análise de correlação e análise de componentes principais empregando-se o software Statistica 7.0. Houve diferenças para os parâmetros físico-químicos das polpas de frutas avaliadas nas diferentes safras. A polpa de achachairu apresentou elevado conteúdo de compostos fenólicos totais com significativa atividade antioxidante, enquanto a polpa de araçá-boi apresentou os maiores teores de carotenoides e a polpa de mangostão amarelo, de flavonoides amarelos.
