Resumo: The consumer market is increasingly demanding, milk quality becomes even more important, which is dependent on several factors such as herd management, milking hygiene, sanitation of the mammary gland, equipment disinfection and cooling of the product. With Normative Instruction number 62 (2011) new somatic cell count and total bacterial count limits were adopted. The properties of small and medium production represent much of the milk production of the country and therefore it is necessary to ensure information needed by producers to ensure the quality of milk and dairy products in order to obtain hygienic product. The aim of this study was to monitor the quality of milk, properties, using a Community of cooling tank, located in the House of Agriculture Bofete - SP. Initially, a lecture on mastitis was carried out, which is the main condition of the dairy herd for participants owners of the project with further practical demonstration of hygienic obtaining milk. Eleven properties were chosen to participate in the survey. Data were compared before the SCC and TBC (12 collections) and after the technical guidelines (twelve collections), the drums of each property as well as the local community tank. The results show that before guidelines, CCS and the median of the drums were CBT 189 103 cells / ml and 281.5 colonies / ml, respectively, and the community expansion tank was 380 103 cells / ml and 1292 colonies / ml. After the actions involved in the project the medians of CCS and CBT were 152,103 cells / mL and 179 colonies / mL and the EU expansion tank were 315,103 cells / mL and 1496 colonies / mL, respectively. In many instances, small farmers do not have technical support, which can be found on the tripod extension of the university. Thus, it concludes the importance of health education activities and rural extension, when assessing the reduction of CCS Community expansion tank, which means lower incidence of mastitis. As for the hygienic aspects, there is need for greater commitment of owners, including those who are not assisted by the project.

As for the hygienic aspects, there is need for greater commitment of owners, including those who are not assisted by the project.Com o mercado consumidor cada vez mais exigente, a qualidade do leite torna-se ainda mais importante, a qual é dependente de diversos fatores, tais como manejo do rebanho, higiene da ordenha, sanidade da glândula mamária, desinfecção de equipamentos e refrigeração do produto. Com a Instrução Normativa número 62 (2011) novos limites de contagem de células somáticas e contagem bacteriana total foram adotados. As propriedades de pequena e média produção representam grande parte da produção leiteira do país e dessa forma é necessário garantir informações necessárias aos produtores para assegurar a qualidade do leite e derivados, visando à obtenção higiênica do produto. O objetivo do presente estudo foi monitorar a qualidade do leite, de propriedades, que utilizam um tanque comunitário de refrigeração, localizado na Casa da Agricultura de Bofete – SP. Inicialmente, foi realizada uma palestra sobre mastite, que é a principal afecção do rebanho leiteiro, para os proprietários participantes do projeto com posterior demonstração prática de obtenção higiênica do leite. Onze propriedades foram escolhidas para a participação da pesquisa. Foram comparados dados da CCS e CBT antes (12 coletas) e após as orientações técnicas (doze coletas), dos tambores de cada propriedade, bem como do tanque comunitário local. Os resultados mostram que antes das orientações, as medianas de CCS e CBT dos tambores foram de 189.103 células/mL e 281,5 colônias/mL, respectivamente e a do tanque comunitário de expansão foi de 380.103 células/mL e 1292 colônias/mL. Após as ações envolvidas no projeto as medianas de CCS e CBT foram de 152.103 células/mL e 179 colônias/mL e as do tanque comunitário de expansão foram 315.103 células/mL e 1496 colônias/mL, respectivamente. Em muitos momentos, os pequenos produtores não contam com apoio técnico, o qual pode ser encontrado no tripé extensionista da universidade. Dessa maneira, conclui-se pela importância das atividades de educação sanitária e de extensão rural, ao se avaliar a redução da CCS do tanque comunitário de expansão, o que significa menor ocorrência de mastites.
