Resumo: This study aimed to evaluate the effect of controlled atmosphere (CA) on maintenance quality of 'Pitenza' tomatoes, through evaluation of physical, physicochemical, chemical and enzymatic parameters. The fruits were harvested in the region of Cartagena – Spain, and immediately after harvest, transported to the Postharvest and Refrigeration laboratory of the Science and Agricultural Technology Departament – Universidad Politécnica de Cartagena/Espanha, where they were kept at 12 ± 1º C for 12 hours. Therefore, the fruits were selected by size and visual aspects (injuries and defects), to standardize the lot. In the experiment, fruits were submitted to the isolated effects of controlled atmosphere (CA), such as: RA (control – atmospheric air), CA1 (5%O 2 :5%CO 2 ) and CA2 (5%O 2 :1%CO 2 ). The evaluations were made regarding pulp firmness, titratable acidity (TA), pH, peroxidase, catalase. Under conditions in which the experiment was conducted, the scores showed that the control fruits, not submitted to AC, presented the best maintenance of the quality during theexperimental period. Likewise, it was found that O2decreased and CO2increased had no effect on theparameters analyzed on 'Pitenza' tomatoes.

Os frutos foram colhidos na região de Cartagena – Espanha e, imediantemanete após acolheita, transportados ao Laboratório de Postrecolección e Refrigeración do Departamento deCiencia y Tecnologia Agrária – Universidad Politécnica de Cartagena/Espanha, onde foram mantidos a12 ± 1ºC por 12 horas. Posteriormente, os frutos foram selecionados quanto ao tamanho e aspectosvisuais (injúrias e defeitos), visando a uniformização do lote. No experimento, os frutos foramsubmetidos ao efeito isolado da atmosfera controlada (AC), como: AR (controle – ar atmosférico),AC1 (5%O2:5%CO2) e AC2 (5%O2:1%CO 2 ). As avaliações foram realizadas quanto a firmeza de polpa, acidez titulável (AT), pH, peroxidase, catalase. Nas condições em que o experimento foi realizado, os resultados permitiram concluir que os frutos controle, não submetidos a AC, apresentaram a melhor manutenção da qualidade durante o período experimental.
