Resumo: Six varieties of sweet potato ("Roxa, Branquinha, Moranguinha, Amendoim, Salmon and 35-S.C.A.) were planted in an area known as "Baixada Fluminense", in the State of Rio de Janeiro, in July 1973. Times of harvesting were 4, 6 and 8 months after planting. Roots and leaves were investigated for protein and sugar content and resulta expressed on basis of dry matter. The highest sugar and protein content in roots was found in 6 (77%) and 8 (4,92%) month old plants, respectively. Four month old plants had the highest leaf protein content (13,71%). Among the varieties studied, the highest protein content in both roots (4,84% and 4,58%) and leaves (16,50% and 11,70%) was observed in "Amendoim" and "Roxa".

O material foi plantado no mês de julho de 1973 e colhido aos 4, 6 e 8 meses, fazendo-se as análises químicas com o material seco. Os resultados obtidos foram analisados e discutidos estatisticamente. A maior percentagem de açúcar na raiz (5,77%) foi encontrada na colheita de 6 meses. Quanto à proteína, a maior percentagem foi observada, na raiz, na colheita de 8 meses (4,92%), e nas folhas, na de 4 meses (13,71%).
