Farm milk storage system's influence on the raw milk microbiological quality

Resumo: | Raw milk on-farm refrigeration aims to increase the storage period, decreasing the costs of transport and acidification loses caused by mesophilic microorganisms, however it can allow the development of heat-resistant enzymes producers psychrotrophic microorganisms that cause several defects on dairy products. The present study goals to evaluate the effect on raw milk quality after storage in expansion or immersion tanks regarding to mesophilic, psychrotrophic and proteolytic psychrotrophic microorganisms. Were evaluated ten dairy farms, five of them with immersion system and other five with expansion system. The average of mesophilic in immersion tanks (6.04±0.71 log UFC/ml) were significantly higher comparing to expansion tanks (4.97±0.77 log UFC/ml), indicating that the immersion refrigeration didn't appear been efficient on those microorganism control. 60% of samples were in disagree to the IN51 standards, been 80% of them from farms with immersion tanks and 40% from expansion tanks. No significant difference between the systems were shown for psychrotrophic and proteolytic psychrotrophic. Samples of both systems presented high percentage (77.2 to 96.9%) of psychrotrophic colonies with proteolytic activity. The milk refrigeration in expansion tanks showed to be more efficient in controlling mesophilic microorganisms than samples cooled in immersion tanks, whereas the same result couldn't be statistically proved on psychrotrophic microorganisms. |

A refrigeração do leite in natura na propriedade rural tem a finalidade de aumentar seu tempo de estocagem, diminuindo os custos de transporte e perdas pela acidificação causada pelos microrganismos mesófilos. No entanto, a refrigeração pode favorecer o desenvolvimento de microrganismos psicrotróficos produtores de enzimas termorresistentes causadoras de vários defeitos em produtos lácteos. O presente trabalho teve por objetivo avaliar a influência da estocagem em tanques de imersão e de expansão na qualidade do leite in natura com relação aos microrganismos mesófilos, psicrotróficos e psicrotróficos proteolíticos. Para tanto, foram avaliadas dez propriedades leiteiras, sende cinco com sistema de resfriamento por imersão e cinco utilizando tanques de expansão. A média de mesófilos em tanques de imersão (6,04±0,71 log UFC/ml) foi significativamente maior que nos tanques de expansão (4.97=0.77 log UFC/ml), indicando que a refrigeração por imersão não se mostrou eficiente no controle deste grupo de microrganismos. 60% das amostras colhidas estavam fora dos padrões exigidos pela IN51, sendo 80% o delas dos produtores de leite com tanque de imersão e 40% em tanque de expansão. Não houve diferença significativa para psicrotróficos e psicrotróficos proteolíticos entre os tipos de estocagem avaliados. Tanto as amostras coletadas dos tanques de imersão quanto às do tanque de expansão apresentaram grandes percentuais (77.2 a 96,9%) de culturas psicrotróficas com atividade proteolítica. O resfriamento do leite em tanques de expansão mostrou-se mais eficiente no controle de microrganismos mesófilos quando comparado ao tanque de imersão, fato que não foi observado estatisticamente com relação aos psicrotróficos e psicrotróficos proteolíticos.
