Determinants of entrepreneurial sustainability of small and medium-sized enterprises:: an exploratory study in restaurants

Resumo: The objective of this manuscript is to determine the factors that create sustainability scenarios and influence decision-making in small and medium-sized restaurants in the municipality of Ibagué, Colombia. The work methodology is presented as an exploratory study, which took 21 small and medium-sized companies in the restaurant subsector as the target population. The information gathering technique used was the interview, oriented to academic experts and entrepreneurs of the restaurant sector. The most representative finding is that there are factors that determine business sustainability, such as the lack of a public policy to strengthen the Colombian business fabric. It is highlighted that an enduring company is one that adapts its management to the intensity of the conditions of the sectorial environment, organizational identity, financial management, market forces and innovation.

La metodología de trabajo se presenta como un estudio exploratorio, la cual tomó como población objeto de estudio 21 pequeñas y medianas empresas del subsector restaurante. Como técnica de recolección de información se empleó la entrevista, orientada a expertos académicos y empresarios del sector restaurantero. El hallazgo más representativo reside en que existen factores que determinan la perdurabilidad empresarial como la carencia de una política pública que fortalezca el tejido empresarial colombiano. Se destaca, que una empresa perdurable es aquella que adecua su manejo a la intensidad de las condiciones del entorno sectorial, la identidad organizacional, la gestión financiera, las fuerzas del mercado y la innovación.O objetivo deste artigo é determinar os fatores que criam cenários de durabilidade e influenciam a tomada de decisão de restaurantes de pequeno e médio porte no município de Ibagué, Colômbia. A metodologia de trabalho apresenta-se como um estudo exploratório, que teve como população em estudo 21 pequenas e médias empresas. A entrevista foi utilizada como técnica de coleta de dados, dirigida a acadêmicos e empresários de restaurantes. A constatação mais representativa é que existem fatores que determinam a durabilidade dos negócios, como a falta de uma política pública que fortaleça o setor na Colômbia.
