Resumo: This research analyzed the school educational process based on the relationship between environmental education policies and the National School Feeding Program (PNAE) based on the perceptions, actions and practices of the subjects involved. The qualitative approach was adopted, using as instruments for the data collected: official documents, participant observation, semi-structured interviews. Content analysis was used to analyze the information. The study demonstrated that the central importance acquired by the school garden in educational practices of Environmental Education mobilizing themes such as healthy eating and food security. Meanwhile, the clues presented in the National School Food Program about the discussion on healthy eating from the perspective of educational practice at school have only effectively come into being through Environmental Education actions and the school garden project.

Se adoptó el enfoque cualitativo, utilizando como instrumento para la recopilación de información: documentos oficiales, observación participante, y entrevistas semiestructuradas. Se realizó un análisis de contenido para los datos. El estudio demostró la importancia alcanzada por el huerto escolar en las prácticas educativas de Educación Ambiental, movilizando temas como la alimentación saludable y la seguridad alimentaria. Además, las pistas presentadas en el PNAE sobre la discusión de la alimentación saludable desde la perspectiva de la práctica educativa en la escuela sólo se han materializado efectivamente mediante las acciones de Educación Ambiental y el proyecto de huerto escolar.Esta pesquisa analisa o processo educativo escolar a partir da relação entre as políticas de Educação Ambiental e o Programa Nacional de Alimentação Escolar (PNAE), tendo como referência as percepções, ações e práticas dos sujeitos envolvidos. Adota-se a abordagem qualitativa, utilizando-se a observação participante e entrevistas semiestruturadas como instrumentos para a coleta de informações. Para a análise dos dados, faz-se uso da análise de conteúdo. O estudo demonstra a importância central adquirida pela horta escolar nas práticas educativas da Educação Ambiental, mobilizando temáticas como alimentação saudável e segurança alimentar.
