Resumo: This paper presents a study developed within the Scientific Initiation Scholarship Program, from the Federal Institute of Goiás, in partnership with CNPq. Basic Education finalist students investigated, with their Chemistry teacher, the knowledge and techniques that emerged in soap manufacturing in a community close to their school. This study additionally aimed to collect information on the disposal methods, both in domestic and food sector businesses settings, of the oils used in the preparation of fried food. Our study aimed to identify similarities between popular and scientific knowledge, developed in an STS Education perspective and in the interactions between the students - social actors in school education - and older individuals - social agents – who acted as catalysts for the adoption of sustainable citizen practices by the younger generations.

Otro objeto de este estudio fue recoger información sobre la asignación, en los hogares y en establecimientos comerciales en el campo de alimentación, para los aceites utilizados en la preparación de alimentos fritos. Este trabajo se centró en observar similitudes entre el conocimiento popular y el conocimiento científico desarrollado en la perspectiva de la Educación CTS y las interacciones entre los estudiantes – agentes sociales en la educación escolar - y los individuos más experimentados – agentes sociales –que ejercieron un papel de facilitadores en la integración de las nuevas generaciones a una práctica sostenible del ciudadano.Desenvolvido no âmbito do Programa de Bolsas de Iniciação Científica do Instituto Federal de Goiás, em parceria com o CNPq, estudantes da etapa final da educação básica investigaram com seu professor de Química quais conhecimentos e técnicas emergiriam na comunidade próxima à instituição de ensino sobre a fabricação de sabão. Outro objeto deste estudo foi coletar informações sobre a destinação, nas residências e em estabelecimentos comerciais do ramo de alimentação, para óleos utilizados no preparo de alimentos fritos.
