E-mail: montealine@yahoo.com.br It is known that honey and other bee products have the image of natural products, healthy and clean. This work aims to generate information on the quality of honey. During the project were collected 21 samples of honey from three groups of native bees. Was performed to determine the physico-chemical and microbiological. As for the color of honey, the samples showed a color ranging from white and dark amber, the values obtained for moisture in honey ranged from 25.1 to 26.4%, the mean level of acidity of the samples was found above the ceiling current legislation, the result of HMF ranged from 35.8 to 55.0, the average pH ranged from 2.51 to 3.69. The honey samples had water activity ranging between 0.65 and 0.69. The fungal count ranged from 1.77 to 2.26 CFU / g log 10 in any of the honey samples analyzed was verified the presence of coliform organisms or Salmonella spp. Most physicochemical parameters obtained in the honey samples showed values suitable for human consumption, so as to hygienic and sanitary quality, which enables the exploration of the product by the creators of Piaui.

Esse trabalho tem como objetivo gerar informações sobre a qualidade de méis. Durante o projeto foram coletadas 21 amostras de méis de três grupos de abelhas nativas. Foi realizada a determinação das características físico-químicas e microbiológicas. Quanto à cor do mel, as amostras apresentaram coloração variando entre o branco e o âmbar escuro, os valores obtidos para umidade nos méis variaram de 25,1 a 26,4 %, o teor médio de acidez das amostras encontrou-se acima do limite máximo das legislações vigentes, o resultado de HMF variou de 35,8 a 55,0, o valor médio de pH variou de 2,51 a 3,69. As amostras de mel apresentaram atividade de água variando entre 0,65 e 0,69.
