Perspectives for diversifying the Brazilian sparkling wine

Resumo: | The Brazilian sparkling wine, in the last twelve years, grew in their production and marketing top 350 % and can observe the constant evolution of its quality. The objective of this paper is to present the trends in the current Market that allow exploring the good moment of Brazilian sparkling wine and expand its limits. For this, potential cultivars for their diversification, as 'Manzoni Bianco' and 'Ribolla Gialla' were identified and different regions, techniques and oenological technics inputs. One new feature is the possibility of producing in “Campanha Gaúcha”, already known for producing grapes and red wines of good quality. On the technical aspect addresses the evolution of methods "short Charmat" and "long Charmat" the production of sparkling quality, besides other techniques like microxigenation in making foam, "direct sparkling" and market trend of sparkling rose. Among the inputs, are the exchange resins, which help increase the acidity of a wine and decreasing pH. All these initiatives are important factors associated to the Brazilian sparkling wine can consolidate their place in the global scenario and reach new markets. |

O objetivo deste trabalho é apresentar as tendências existentes no mercado atual que possibilitem explorar o bom momento do espumante brasileiro e expandir seus limites. Para isso, foram apontadas cultivares potenciais para sua diversificação, como 'Manzoni Bianco' e 'Ribolla Gialla', além de regiões distintas, técnicas diferenciadas de espumantização e insumos enológicos. Uma das novidades é a possibilidade de produção na Campanha Gaúcha, já conhecida pela produção de uvas e vinhos tintos de boa qualidade. No aspecto técnico, aborda-se a evolução dos métodos “Charmat curto” e “Charmat longo” na produção de espumantes de qualidade, além de outras técnicas como a micro-oxigenação na tomada de espuma, a “espumantização direta” e a tendência mercadológica do espumante rosé. Entre os insumos, estão as resinas de intercâmbio de cátions, que favorecem o aumento da acidez de um vinho e diminuição do pH. Todos estes fatores associados representam importantes iniciativas para que o espumante brasileiro possa consolidar seu espaço no cenário global e alcançar novos mercados.Departamento de Diagnóstico e Pesquisa Agropecuária.
