Resumo: The effect of caffeine on mycelia growth of fungi isolated from coffee was evaluated. The fungi were cultivated in decaffeinated coffee agar media added with caffeine at 0 to 1,0 %, and fungistatic effect was expressed by the size of colony diameter. The caffeine degradation by fungal activity in liquid medium was evaluated by HPLC. The antibiosis was proportional to dose, and the inhibition of growth was of 52,8 to 100% of Aspergillus flavus, 9,4 to 72,5% of Fusarium semitectum, 8,8 to 66,8% of Penicillium sp., 5,3 to 54,1% of Fusarium sp., 4,6 to 39% of A. niger and 4,7 to 37% of A. ochraceus. The inhibitory activity declined, probably due to its degradation by the fungal activity. Therefore, the fungistatic effect of caffeine may contribute for coffee quality and sanity

Os fungos foram cultivados em ágar contendo café descafeinado e cafeína (0 a 1,0 %) e o efeito fungistático avaliado, medindo o diâmetro de colônia fúngica. A degradação de cafeína por fungos em meio líquido foi analisada, quantificando cafeína residual por CLAE. A cafeína apresentou antibiose proporcional à dose, com inibição de 52,8 a 100% de Aspergillus flavus, 9,4 a 72,5% de Fusarium semitectum, 8,8 a 66,8% de Penicillium sp., 5,3 a 54,1% de Fusarium sp., 4,6 a 39% de A. Níger e 4,7 a 37% de A. ochraceus. Verificou-se redução da atividade inibitória, provavelmente, decorrente da degradação de cafeína pelos fungos.
