Resumo: Prepared by the teaching staff of the Department of Home Economics, the Bachelor's Degree Course in Hospitality at the Federal Rural University of Rio de Janeiro (UFRRJ) was established in 2010 as a result of the Support Program for Restructuring and Expansion Plans of Federal Universities (REUNI). After ten years of existence, this article aims to analyze the role of the Mandatory Supervised Internship (ECSO) in the Hospitality education at UFRRJ. The methodological approach is qualitative and quantitative, primarily mediated by the authors who are part of the rural course community. Primary data was collected through an electronic questionnaire administered to graduates who have completed the mandatory internship and graduated by the year 2017. The results of the statistical analysis of the primary data revealed the positive impact of ECSO on the formation of these graduates. On the other hand, negative impacts were discovered that intensify physical, social, and psychological strains regarding personal life, leisure, and the accumulation of tasks related to education. The concentration of the hotel industry in the state of Rio de Janeiro in the capital city, with emphasis on the southern zone of Rio de Janeiro, becomes a complicating factor in regard to the simultaneous completion of ECSO and other curricular obligations of the Hospitality Course at UFRRJ, located in Seropédica, a municipality in the Baixada Fluminense.

Después de diez años de existencia, este artículo tiene como objetivo analizar el papel de la Práctica Curricular Obligatoria Supervisada (ECSO) en la formación en Hotelería en la UFRRJ. El enfoque metodológico es cuali-cuantitativo, mediado principalmente por el lugar de escritura de los autores que integran la comunidad del referido curso rural. Los datos primarios fueron recolectados a través de un cuestionario electrónico aplicado a los egresados ​​que ya habían realizado la pasantía obligatoria y culminaron la graduación para el año 2017. Los resultados del análisis estadístico de los datos primarios permitieron conocer cómo ECSO impacta positivamente en la formación de estos egresados. Por otro lado, se encontraron impactos negativos que profundizan el desgaste físico, social y psicológico en lo que respecta a la vida personal, el ocio y la acumulación de tareas relacionadas con el entrenamiento. La concentración de la red hotelera del estado de Río de Janeiro en la capital carioca, con énfasis en la Zona Sur de Río de Janeiro, se convierte en un factor de complicación en cuanto al ejercicio de la ECSO concomitantemente con las demás obligaciones curriculares del Curso de Hotelería de la UFRRJ, con sede en Seropédica, municipio de la Baixada Fluminense.Développé par le personnel enseignant du Département d'économie domestique, le baccalauréat en hôtellerie de l'Université rurale fédérale de Rio de Janeiro (UFRRJ) a vu le jour en 2010, à la suite du Programme d'appui aux plans de restructuration et d'expansion des universités fédérales (REUNI ). Après dix ans d'existence, cet article vise à analyser le rôle du Stage Curriculaire Encadré Obligatoire (ECSO) dans la formation en Hôtellerie à l'UFRRJ. L'approche méthodologique est quali-quantitative, médiatisée principalement par le lieu d'écriture des auteurs qui composent la communauté du cours rural référencé. Les données primaires ont été recueillies au moyen d'un questionnaire électronique appliqué aux diplômés qui avaient déjà effectué le stage obligatoire et obtenu leur diplôme d'ici l'année 2017. Les résultats de l'analyse statistique des données primaires ont permis de savoir comment ECSO impacte positivement la formation de ces diplômés. D'autre part, des impacts négatifs ont été constatés qui approfondissent l'épuisement physique, social et psychologique en ce qui concerne la vie personnelle, les loisirs et l'accumulation de tâches liées à la formation. La concentration du réseau hôtelier de l'État de Rio de Janeiro dans la capitale de Rio de Janeiro, en mettant l'accent sur la zone sud de Rio de Janeiro, devient un facteur de complication en ce qui concerne l'exercice de l'ECSO en même temps que les autres obligations curriculaires de le cours d'accueil à l'UFRRJ, basé à Seropédica , municipalité de Baixada Fluminense.Elaborado pela equipe docente do então Departamento de Economia Doméstica, o Curso de Bacharelado em Hotelaria da Universidade Federal Rural do Rio de Janeiro (UFRRJ) surgiu em 2010, enquanto resultado do Programa de Apoio a Planos de Reestruturação e Expansão das Universidades Federais (REUNI). Após mais de uma década de existência, este artigo tem o objetivo de analisar o papel do Estágio Curricular Supervisionado Obrigatório (ECSO) na formação de egressos em Hotelaria da UFRRJ. A abordagem metodológica é quali-quantitativa, mediada sobretudo pelo lugar de escrita dos autores que compõem a comunidade do referido curso ruralino. Os dados primários foram coletados através de um questionário eletrônico aplicado aos egressos que já realizaram o estágio obrigatório e concluíram a graduação até o ano de 2017. Os resultados da análise estatística dos dados primários permitiram conhecer como o ECSO impacta positivamente a formação destes egressos. Por outro lado, descobriram-se impactos negativos que aprofundam desgastes físicos, sociais e psicológicos no que diz respeito à vida pessoal, ao lazer e ao acúmulo de tarefas ligadas à formação.
