Resumo: | In recent years, it has been possible to observe that products that have commercial appeal, aimed at health benefits, produced by substances of natural origin, become more and more numerous in supermarkets. In this context, technological prospecting is indicative of the movement of academia and companies in the development of innovative products based on technology. The search tools in periodicals made it possible to know the progression of food technology. On a world scale, there has been a progression and growth of technology in its patent deposits, China and South Korea, together, are the largest depositors of patents, both are mainly responsible for this increase in patents. In other countries, the number of patents within the survey does not exceed a dozen. Although it is possible to find many products sold on the market as functional food, the vast majority do not have a patent deposit, giving preference to the use of industrial secrets. |

Nesse contexto, a prospecção tecnológica é um indicativo do movimento da academia e das empresas no desenvolvimento de produtos inovadores sobre a tecnologia. As ferramentas de buscas em periódicos possibilitaram conhecer a progressão da tecnologia alimentícia. Em uma escala mundial, observou-se uma progressão e o crescimento da tecnologia em seus depósitos de patentes, China e Coreia do Sul, juntas, são as maiores depositantes das patentes, ambas são as principais responsáveis por essa elevação de patentes. Nos demais países, o número de patentes dentro da pesquisa não ultrapassa uma dezena.
