Recipe book from Minas Gerais in the nineteenth century: an analysis of lexical items of weights and measures

This paper uses as corpus Dona Plautina Nunes Horta’s recipe book, written in the city of Mariana in 1896, which contains a set of 130 recipes from Minas Gerais cuisine. Our goal is to analyze, from a historical perspective, the use of the lexical terminology of weights and measures from different systems, here called “old” and “new”.  Using AntConc, a freeware corpus analysis toolkit for concordancing and text analysis, we surveyed 34 different types of weights and measures of ingredients. After studying the history of the implementation of measurement systems, both in Portugal and Brazil (LOPES, 2005; ZUIN, 2007), we tried to explain why different terminological items are used to indicate weights and measures in the corpus under analysis. As a result, we found that the diversity of lexical terminologies portrays a cultural habitus (BOURDIEU, 1977; DURANTI, 2000) of staying with the old system while accepting the new one.
