Resumo: The processing fruit has high growth in recent years, making the disposal of waste in the environment represent an increasing problem. Research to assess the quality and potential utilization of by-products generated are noteworthy, since they can contribute to add value to them. The aim of this study was to characterize the quality, the content of bioactive compounds and the antioxidant potential of the fruit processing by-products for the production of pulps in agribusinesses located in Petrolina and Juazeiro-BA. They were collected by-products generated by three companies producing fruit pulps. They collected the raw material and by-products: Pineapples 'Pearl' and 'Smooth Cayenne'; acerola, represented by a mixture of varieties; carambola; guava 'Paluma'; mangoes '„Tommy Atkins‟', '„Keitt‟' and '„Palmer‟'; and passion fruit. Also were evaluated by-products arising from the refinement of pre-processed pulps were: plum, cocoa, yellow monbim, cashew, cupuassu, soursop, jenipapo, papaya, passion fruit, strawberry, tamarind, and umbu. For soursop and tamarind, the by-products generated corresponded to pulp and seeds as for passion was represented by seeds. The other corresponded to the pulp, except for umbu whose by-product contained peel and pulp. The variables were: proportion peel, seed and pulp; water activity; soluble solids, total soluble sugars and reducing sugars; titratable acidity; pH; starch; content of pectic; levels of ascorbic acid, carotenoids and total extractable polyphenols; and antioxidant activity by ABTS method. The results were expressed as mean and standard deviation. High soluble solids and soluble sugars were concentrated in the by-products represented by shells of the sleeves and plum refinement, cocoa and soursop. The by-products corresponding to the seeds of acerola fruits and bark of the mangos and passion fruit, as well as those of soursop and plum, are sources of pectin. Almonds of all mangoes, followed by seeds of tamarind and soursop, showed high levels of starch. The by-products represented by acerola seed processed in companies and to the byproduct of cashew showed high levels of ascorbic acid. The shells of all the sleeves, the seeds of guava and acerola, belonging to the Company 2 as well as the refining and papaya cajá corresponded by-products with the highest levels of total carotenoids, over 20 μg.g-1. Byproducts corresponding to carambola, the skins and seeds of mangoes to acerolas seeds, and return fines of tamarind and his seed, strawberry, hog plum and cashew, showed the highest polyphenol content: above 500 mg EAG.100g-1. Almonds of all varieties of mangoes, the bark of the mangos '„Palmer‟' Enterprise 1 and 3, and '„Keitt‟' Company 3, as well as refining and tamarind seed, showed high antioxidant activity by ABTS method: above 600 uM Trolox e.g. pulp-1. Pesquisas que avaliem a qualidade e o potencial de aproveitamento dos subprodutos gerados merecem destaque, uma vez que podem contribuir para agregar-lhes valor. O objetivo deste trabalho foi caracterizar a qualidade, o teor de compostos bioativos e o potencial antioxidante de subprodutos do processamento de frutas para produção de polpas, em agroindústrias situadas em Petrolina-PE e Juazeiro-BA. Foram coletados subprodutos gerados por três empresas produtoras de polpas de frutas. Foram coletados a matéria-prima e os subprodutos de: abacaxis „Pérola‟ e „Smooth Cayenne‟; acerola, representada por uma mistura de variedades; carambola goiaba „Paluma‟, mangas „„Tommy Atkins‟‟, „„Keitt‟‟ e „„Palmer‟‟; e maracujá-amarelo. Também foram avaliados os subprodutos advindos do refinamento de polpas pré-processadas foram: ameixa, cacau, cajá, caju, cupuaçu, graviola, jenipapo, mamão, maracujá, morango, tamarindo, e umbu. Para graviola e tamarindo, os subprodutos gerados corresponderam a polpa e sementes, enquanto para maracujá foi representado por sementes. Os demais correspondiam à polpa, exceto para umbu cujo subproduto continha casca e polpa. As variáveis analisadas foram: proporção de casca, semente e polpa; atividade de água; teores de sólidos solúveis, de açúcares solúveis totais e de açúcares redutores; acidez titulável; pH; teor de amido; teor de substâncias pécticas; teores de ácido ascórbico, de carotenoides e de polifenois extraíveis totais; e atividade antioxidante, pelo método ABTS. Os resultados foram expressos em média e desvio-padrão. Altos teores de sólidos solúveis e de açúcares solúveis concentraram-se nos subprodutos representados por cascas das mangas e do refinamento de ameixa, cacau e graviola. Os subprodutos correspondentes às sementes das acerolas e cascas das mangas e do maracujá, bem como aqueles de graviola e ameixa, são fontes de pectina. As amêndoas de todas as mangas, seguidas das sementes de tamarindo e graviola, apresentaram altos teores de amido. Os subprodutos representados por sementes de acerola processadas nas empresas avaliadas e pelo subproduto do caju apresentaram elevados teores de ácido ascórbico. As cascas de todas as mangas, as sementes das goiabas e da acerola, pertencentes à Empresa 2, bem como o refino de cajá e mamão, corresponderam aos subprodutos com os maiores teores de carotenoides totais, acima de 20 μg.g-1. Subprodutos correspondentes à carambola, às cascas e sementes das mangas, às sementes de acerolas, e aos refinos do tamarindo e sua semente, morango, cajá e caju, exibiram os maiores teores de polifenois: acima de 500 mg EAG.100g-1. Amêndoas de todas cultivares de mangas, as cascas das mangas „„Palmer‟‟ das Empresas 1 e 3, e „„Keitt‟‟ da Empresa 3, assim como o refino e semente de tamarindo, mostraram atividades antioxidantes altas pelo método ABTS: acima de 600 μM Trolox.g polpa-1.
