Resumo: Situated in the northeast of the State of Rio Grande do Sul (RS) - Brazil, Campos de Cima da Serra is a traditional cattle ranching region, recognized as a primary economic activity. In addition, the small rural families have also developed a handmade production of a characteristic regional cheese: Serrano cheese. The secular tradition of Serrano cheese production was forwarded across generations with small changes. In spite of the cheese’s historical, economic, and cultural importance be preserved, the traditional producers have seen their know-how be appropriated by other producers - those “better adapted” from a technical and economic point of view. This paper aims to document this dispute, showing how the traditional producer families of Serrano cheese created a system of classification to identify and differentiate themselves from the other cheese producers. In this context, the paper also aims to analyze the public policies currently pursued by the State in order to protect the know-how, culture and lifestyle associated with the handmade production.

Les familles rurales enquêtées développent à côté de l’atelier d’élevage un atelier de transformation pour la production du fromage Serrano. La tradition séculière de la production de ce fromage s’est perpétuée jusqu’à aujourd’hui sans souffrir de grande transformation. Malgré toute l'importance historique, économique et culturelle de la production du fromage Serrano, les familles de producteurs traditionnels ont vu leur savoir-faire accaparé par d'autres groupes de producteurs, « mieux adaptés » d'un point de vue technologique et économique. Le présent travail cherche à mettre en évidence les divergences entre les deux groupes en montrant que les familles des producteurs traditionnels de fromages Serranos ont créé un système d'appellation pour s'identifier et se différencier des autres producteurs. Dans ce contexte, ce travail a aussi pour objectif d'analyser la mise en place de politiques publiques par l'Etat afin de protéger ce savoir-faire, cette culture et le mode de vie associé à la production artisanale de produits traditionnels comme le fromage Serrano.Situada no Sul do Brasil, no Nordeste do Estado do Rio Grande do Sul (RS), a região dos Campos de Cima da Serra tem na pecuária em sistema de campo nativo uma de suas principais atividades econômicas. As famílias rurais estudadas desenvolveram, juntamente ao sistema de produção da pecuária de corte, a atividade de produção artesanal de um queijo característico da região, o Queijo Serrano. A tradição secular da produção desse queijo foi transmitida de geração a geração, sem grandes mudanças. Apesar de toda a importância histórica, econômica e cultural do Queijo Serrano, as famílias dos produtores tradicionais têm visto seu saber-fazer sendo apropriado por outros grupos de produtores, “melhor adaptados” do ponto de vista técnico e econômico. O presente trabalho busca evidenciar essa disputa, mostrando que as famílias dos produtores tradicionais de Queijo Serrano criaram um sistema de classificação para identificar-se e diferenciar-se dos demais produtores de queijo.
